Notes: Mash grains with 0.5g amylase powder.
Boil coriander seeds and orange peel in addition to hops. Maybe add a very small amount of ginger.
Prepare wort without honey, fill up to 9.5L and pitch yeast. Fermentation should be over in a few days. Rack to secondary and mix the honey in with a little water.
Prime with 100-105g honey and let bottle condition.

| Notes: All of Kate is lightly oaked. We make our own Portwood simply by infusing oak spirals ( The Barrel Mill, Avon, MN- 800.201.7125) with local Port. Of course if I told you the amounts and proportions I have to kill you!! Actually, we take 6 spirals and break them up, place them into a 10 gal. corny keg and pour 3 bottles of Tawney Port over the spirals. We add about 10 PSI to the keg and let the concoction sit for 18-25 days. Then we fill the remainder of the 10 gal. keg with Kate. Let it sit at ambient temp for 45-60 days then inject the 10 gals back into the 440 gals of KtG. Once the keg is empty we then back fill the 10 gals and let the Kate sit on the oak for another 6 months. This become the double oaked Kate. Very rare, only about 56 bottles produced. Notes:
"Mash in at 120 °F (approximately 50 °C). Add juniper berries to the mash. Raise the mash temperature slowly over 90 minutes to about 160 °F (approximately 70 °C). Rest the mash for 60 minutes. Keep the mash covered to retain heat. Place a few juniper twigs on top of the false bottom of the lauter tun to cover it with a single layer. Ladle the mash into the lauter tun. Start sparging. Add hops to the wort at the start of the run-off. At the end of the sparge, raise the wort temperature to 180 °F (approximately 80 °C) and hold it there for about 20 minutes to sterilize it. But do not boil! Let cool to about 70 °F (approximately 20 °C) and add yeast. Ferment until the brew reaches final gravity. Siphon into jugs or bottles and store in cool place (best at around 40 °F, approximately 5 °C)." |

Notes: - I scaled the hops from 5gal to 6gal by increasing 20% by weight, based on the 20% increased water volume, not grain weight difference, which I increased by 40% (20% above the 20% added to scale to 6 gals batch) to get the ABV up a bit.
- Mill grain twice
- Don't leave heat on after meeting mash-in temp (163).
- Sparge and drain while boil kettle heats up.
While the grain is mashing, start the invert sugar.
- heat .6 lb of cane sugar (not table sugar) in .9 cup of water. As it’s heating, add .15 teaspoon citric acid
- simmer, stirring frequently, for at least 20 minutes. The longer it simmers the darker and thicker it will be; try not to simmer it for more than 30-40 minutes for this beer.
