| Notes: Procesas žingsnis po žingsnio 1. Mashing Įkaitink 18 l vandens iki 65 °C. Įmaišyk visą salyklą. Palaikyk 60 min ties ~65–67°C. Po to leisk misai šiek tiek sutirštėti (15 min pailsėti). 2. Miso kepimas Supilk visą mash masę į kepimo indus (pvz. metalines skardas). Kepk orkaitėje 190°C apie 3–4 val., kol: paviršius tampa tamsiai gintarinis / rudas, pasirodo duonos plutelės kvapas, misa ima karamelizuotis, bet neperdega. Jei reikia, kelis kartus pamaišyk. 3. Sparge / išplovimas Išimk keptą masę, supilk atgal į Brew Monk filtravimo krepšį. Perplauk 10 l vandens ~78 °C. Surink visą misą į virimo katilą. 4. Apynių pridėjimas Virimo nereikia (nebent norėtum 5–10 min sanitarinio virimo). Supilk 2 l apynių arbatos (pagamintos iš 40 g apynių, kaip aukščiau). Ir laukiniu kriaušių.Gerai išmaišyk. 5. Aušinimas Atvėsink iki 32°C. 6. Fermentacija Įsodink senalio mieles (ar kitas švaresnes ale tipo). Fermentuok 32°C 2 dienų, kol FG ~1.014. Pasibaigus fermentacijai, leisk nusistovėti 1d. šaltoje vietoje. 7. Brandinimas ir karbonizacija Supilstyk į butelius arba keg’ą. Pridėk cukraus karbonizacijai (~6–7 g/l). Brandink 1savaites 18–20 °C, tada 1savaites vėsiai (8–10 °C). metalinius padėklus (labiau panašius į dėžes), maždaug 20 x 40 x 10 centimetrų pločio, 40 cm ilgio ir 10 cm aukščio. |
