Buffering the molasses wash pH with calcium is recommended to maintain a robust fermentation as pH will drop dramatically during fermentation sometimes bringing everything to a halt. Calcium hydroxide is very reactive, calcium carbonate will work also. Molasses is deficient in a number of things, so adding a yeast nutrient supplement and DAP will make for a much more robust fermentation. Bread yeast is great for making bread, but I would suggest a distillers yeast or champagne yeast for rum.
