Notes: The orange juice came from a bunch of over ripe tangerines that were boiled skin and all and then sieved to make a clear juice. The juice has some of the bitterness of the pith plus the flavor and sweetness of the juices.
The coriander is crushed and then boiled in the orange juice to eliminate any bacteria.
The juice less the coriander seeds are placed in the secondary and the beer slowly added to reduce any chance of oxidation.

Notes: Actual OG was 1.090. I used two packs of yeast to give it a healthy fermentation. Primary fermentation : 1 week so far, planning on 3/4 weeks. Then dry hop in the secondary for another 10 days. 2/15 racked to secondary for dry hop, SG was 1.021
Done done and done. Tastes amazing. Nice bone-white head. Full body and nice hoppiness that you would expect from a black IPA

I like to split the additions in half over the 2 weeks
*Amber malt: Use Thomas Fawcett Amber Malt, don't just use any old amber malt. If you can't find Thomas Fawcett Amber, look harder. This is the exact malt DFH uses, and it's a distinctive flavor. It's available at quite a few online retailers if your LHBS doesn't carry it.
**Hopping: Mix all 5oz of hops together, how often you add them is up to you. Some people add a couple pellets every minute, others fill up 30 dixie cups, and add one cup per 3 minutes. Personally I do 10 additions, 0.5oz every 10 minutes, and it turns out excellent.
That's about it, it's actually a fairly easy beer to brew other than the continuous hoping. If you can't find WLP007, use WYeast 1098 - Dry Whitbread, or Safale S04. Definitely use WLP007 if it's available, the yeast character is dead on.
I just had a slightly tweaked version take 1st place for IIPAs in a competition. |

Notes: When primary fermentation is complete, split 2 nice fresh vanilla beans lengthwise. Scrape out and reserve all the seeds and "gunk" in them. Cut the pods into roughly 2-3" pieces and add the pods, seeds and "gunk" to a secondary fermenter. Leave them there until you get the amount of vanilla flavor you like. I usually start tasting at about a week and a half, and may leave them in until 2 weeks. You may want to let them go a bit more than you think is necessary since the vanilla flavor fades with time. When the beer is done in secondary, rack to a keg or bottling bucket with about 375 ml. of bourbon. I use Jim Beam Black. You don't need to use an exceptionally good bourbon. The bourbon flavor should integrate with the porter and vanilla flavors, not stand out and shout "Bourbon!" You can determine the amount of bourbon for your own tastes through the following method....pour 4 2 oz. samples of the beer that goes into the bottling bucket or keg. Dose each with a measured amount of bourbon. Taste them to decide which you like best, then scale that amount up to your batch size. This beers does not need, nor benefit from, extensive aging. Generally, I prefer it within a couple months of brewing. |
