One was a 1 lb bag of Breiss Golden Light DME. The other was a 3 lb bag of CBW Golden Light DME. I added all 4 lbs to the beginning of the boil (careful of overboil) but I have also heard of 1/2 in the beginning, 1/2 at the end. I used LME at the end instead. Important to add LME with about 15 mins left in boil. This will avoid over-scorching which is known to give a metallic taste to the beer. Add pureed apples (use a muslin bag) with about 10 mins left in the boil. You will not taste the apple in the brew, but the pectin in the apple adds a nice body and haze to the beer. Add lactose sugar with 10 mins left in boil. Freeze Strawberries and whole vanilla bean (use however much you want). When it is time to add these at day 7 of the secondary fermentation, they will be easy to crush. I like the smell of the galaxy, cascade, and simcoe hops the best, which is why I chose to use them for the dry hop. Since most of what we taste comes from what we smell, it is important to use your favorite hops towards the end of your boil and for the dry hop. Dry hopping will increase aroma and get rid of bitterness. Inspired by my favorite Milkshake IPA's from Tired Hands.

The juice has some of the bitterness of the pith plus the flavor and sweetness of the juices. The coriander is crushed and then boiled in the orange juice to eliminate any bacteria. The juice less the coriander seeds are placed in the secondary and the beer slowly added to reduce any chance of oxidation. leave for one week then bottle to condition.

Then dry hop in the secondary for another 10 days. 2/15 racked to secondary for dry hop, SG was 1.021 Done done and done. Tastes amazing. Nice bone-white head. Full body and nice hoppiness that you would expect from a black IPA

I zested and juiced 3 limes which were put in the boil. I left the beer in the primary fermenter for one week. For Secondary I split the batch into (2) 2.5 gallon glass carboys. For 1 batch I roasted 2 large jalapenos and sliced them thinly. I placed them in a mason jar and added 2/3 cup of vodka (for sanitizing). I let it sit for 24 hours and then poured the whole mixture in. For the 2nd batch I left the original beer as is. Let both sit in secondary fermenters for 1 additional week then tasted. The unaltered batch was excellent. The Jalapeno batch was very spicy and had a strong raw pepper smell/taste. After bottling and sitting for 6 weeks, the Jalapeno batch has mellowed in its pepper taste but still remains very spicy. This will be an excellent beer in a few more weeks. O.G. 1.062 F.G. 1.012 AVB 6.93%

Roast 2 jalapeños to Carmelize sugars, then soak for 30 minutes in 2 oz Vodka - place these 2 jalapeños in secondary for 3 to 6 days depending on how much heat one wants. The honey gets put into the boiling Wort at flameout. Use honey to prime with.
