Notes: 20,5 liters of water prepared with salts. Reduce to 10 liters for mash.
Step mash, here’s the Oedipus regime: Mash in at 55°C;
45°C rest: 20-25 min (Important for Clove / Pepper taste coming from the Yeast.)
As you raise the temperature slowly of the Mash hold at 55°C for a protein rest of 5 min
raise to 62°C, rest 45 minutes;
raise to 68°C, rest 15 minutes;
raise to 72°C, rest 15 minutes;
then raise to 78°C, rest 5 minutes, and mash out.
Sparge with 10,5 liters and top up as necessary to get about 16 liters of wort.
Boil for 60 minutes, adding hops according to the schedule.
After the boil, chill to about 20°C, aerate the wort, and pitch the yeast. Allow the temperature to free rise during fermentation, but no higher than 28°C.
When fermentation is complete and the gravity has stabilized, crash, condition cold, and carbonate to a relatively high level. |

"Brewed with some of our favorite new hop varieties from our favorite hop farmers - Citra, Simcoe, Chinook, Ekuanot, Azacca, and Galaxy. Electric Jellyfish is filled with a bright tropical citrus character along with notes of orange, mango, lychee, and a floral backbone. The Jellyfish is a hazy new school IPA focusing on the juicy hop flavor and aroma while keeping the bitterness balanced and refreshing."
So yeah...I don't have any simcoe and I have a ton of open hops and chinook is not one of them. Substituting Idaho 7 for the Simcoe and Chinook; also going heavy on Citra to make up for some of the Chinook. Hoping to accomplish the resiny/piney from the Idaho 7. Grapefruit is kind of missing but I usually like to stick to 3 varieties and this is already 5.
Shooting for an 'orange juice' look based on pictures I saw of the beer, but generally not a fan as it just looks oxidized. |

Put LDME in hot water bath
Bring 2.5 gallons water to 65C (overshot, added half a gallon t bring down)
Add steeping grains to sock and put in water, 20 minutes at <76C
Remove bag,(did ghetto sparge), (burnt hand on lid) , bring to boil
Remove from heat
Add LME stir through
Bring wort to boil
Add 2oz cluster @60
Add half whirlfloc tab @15
Add 1oz cascade @1
Flame out
Add DME and stir through
Add water to batch to bring below 90C -- isomerisation exponential drop off from 100 to 79
Siphon hot wort to cube (went way better than expected)
Top cube up with water to 5G
(temp in cube was now 50C, less than pasteurisation, so commenced chilling in bathtub (in sealed cube))
(gave up on chilling, chilling sucks, stuck cube outside till tomorrow)
Seal cube
Aerate wort and pitch yeast @ 17C (like 3 shakes and pitched @17.8c, 2017-03-19 12pm)
(put in ferm fridge but all controls off. glad wrap for lid)
Leave cube to ferment @17c (maybe blow off tube)
(2017-03-20 9AM 17.7C 1" krausen)
When activity ceases raise temp to 21C
When FG stable crash to as cold as we can get (prob not very cold)
Add gelatin (1/2tsp dissolved in 1/4 cup water)
Rack into bottling bucket with priming soln

♦ STANDARD BREWING NOTES:
Create 8 gallons sparge water. Bring to 154° strike temperature
Prime pump. Push water through hose.
60 mins at mash – Add tbsp 5.2 pH balancer
Add grain – Sparge at 152° for ___ minutes (Minimum 60)
(One gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
