Use frozen mixed berries, they were too tart and added 1/2 cup sugar.

| Notes: This is a classic London Porter recipe. It uses the rumoured Fullers London Porter grain bill of 12% Brown Malt, 10% Crystal and 2% Chocolate Malt. I've used Dark Crystal to give some more depth to it. The beer will have a dark brown colour with a hint of amber. Yeast used was London 1028 which is good for brewing Porters but London III 1318 can also be used for a less dry finish. |

Notes: Basic recipie from grey hughes book home brew beer with a few tweaks
Note: water profile is arbitrary as I am not testing or modifying the water, it will be standard southern UK tap water, filtered.
Came out nice however would benefit from more body and more fruit flavours.
Also smokey flavour was barely noticeable, will add much more smoked wheat in next batch. |

Notes: Very light and extremely fruity IPA which is sure to blow your taste buds away! Hopped with THREE TIMES the typical American IPA levels, which citrus notes central to the aroma and flavour profile.
Use English or American Ale yeast.
O.G. 1.053
F.G. 1.014
ABV: 5.2%
For 19L batch:
Place crushed malt in 7.5L water at 68C and steep for 30min. Strain, rinse with 3L hot water. Boil the remaining ~9.5L liquid with malt extract and boiling hops for 60mins.
Ferment at 21C
After ~1week or when fermentation shows signs of stopping, rack to secondary and add dry hopping pellets.
If possible, cellar beer at 12.5C for ~1 week. |

| Notes: Pretty straight forward. The MRS wants an easy drinking brew for summer that's not too hoppy or too high on the ABV scale. Going to do this BIAB, so I'm not adding any rice hulls. Target mash temp is ~152. Cane sugar is just to dry this out and kick it up over the 3% range. SRM is just over the threshold of the style range. Last note...no water chemistry. I just use the Publix Spring Water. So yeah, it's whatever that is. |
