Notes: Build starter to get 406B cells. Mash longer at 90 minutes for full conversion at 147F. Get 7.5G for pre-boil to get 6G after 90 minute boil to reduce DMS. Control fermentation @ 50F, perform a Diacytel rest to reduce sulphur at end of fermentation (60F for 3+ days), and lager for minimum of 4 weeks at ~35-40F. |
