Notes: Make yeast starter at least 1 day prior to pitching.
Do a single-infusion mash for 60 minutes at 152°F (67°C). Boil for 60 minutes following the kettle hops schedule.
Pitch the yeast at 65°F (18°C) and ramp the temperature up to 68°F (20°C) over 3 days. Bring the temperature up to the low 70s Fahrenheit (low 20s Celsius) to complete primary fermentation, adding the first dry hops when the gravity reaches 1.020.
Primary dry-hop addition at 1.022
Rack into secondary onto the apricot puree for 1 week. Add the second dry hops for the last 4 days in secondary. |

| Notes: Add gypsum (calcium sulfate) to taste depending on your local water source. Mash 50 minutes at 150°F (66°C). Vorlauf (collect first runnings) until the wort runs clear. Collect 6.5 gallons (24.6 liters) and boil for 60 minutes. Add yeast nutrient at 10 minutes. Target 1.065 specific gravity. Chill to 70°F (21°C). Pitch healthy American ale yeast. Ferment at 66°F (19°C) and turn off the temperature control as fermentation vigor slows. Once desired gravity is reached, rest for a few days and dry hop for 4–6 days. Rack to a corny keg and force carbonate at 38°F (3°C) for two weeks. |

Notes: Et veldig mykt og godt øl. Merkbar sødme og lakrissmak fra lakrisroten, noe som balanseres veldig godt med mørk sjokolade og kaffesmak fra bruken av den engelske Pale chocolate.
Lakris er veldig godt i porter og har en rekke smaker som harmoniserer med smak av røstet malt. Det inneholder imidlertid noe som heter glycyrrhisinsyre, som virker 50-150 ganger så søtt for ganene våre som sukker.
Dette er en oppskrift løst inspirert av smakene til Sumbel Porter, en meget god porter fra Ægir.
Dersom du kun ønsker et hint av lakris kan du bruke ca. 1gr per liter, men for de som er glad i lakris så kan det være godt med opp til 50g. Lakrissmaken kan virke kraftig til å begynne med, men vil modnes og bli litt mildere og rundere. |

| Notes: Steep the crushed malts in 2.5 gallons (9.5 L) of water at 155° F (70° C) for 30 minutes. Remove the grains from the wort. Add the malt extracts and boil for 60 minutes. Add the first hop addition of Amarillo at the beginning of the boil primarily as a foam inhibitor. Add your irish moss for the last 30 minutes. Turn off your burner and remove your pot from your heat source. Now add your 5 ounces of Amarillo hops, and stir to mix in. After about 3 to 4 minutes, begin using your wort chiller to drop the temperature of the wort to pitching temperature. This addition is a bit tricky, but the goal is to have the large amount of hops in your beer for about 5 minutes after the beer has finished boiling, but prior to cooling below around 150. This extracts a small amount of hop bitterness, and a large amount of hop flavors. When you have cooled your beer to about 80, you can strain the beer into your fermenter. Aerate your beer and pitch your yeast. Ferment at 68°-70°F to help hold the aromatics in the beer. When fermentation is complete, rack your beer off the trub, and add the remaining “dry hop” addition of 3.0 oz. of Amarillo, and allow the beer to absorb the dry hop flavors for about 4 days. Then bottle or keg as you normally would. |

Spread the pumpkin on a cookie sheet and bake for 60 minutes at 350F degrees before adding to the mash - cool before adding to mash
Toast 2-row for 30 minutes @ 350F degrees and then crush grains before adding them to the mash.
Cut 1 whole pumpkin into cubes (no skin or guts) and bake for 40 minutes at 350F degrees or until golden brown and caramelizing. Add to secondary for 7 days. |
