Notes: Grains added at about 40 degrees as water was heating, for mini acid and protien fly bys!
Single decoction mash used - 67 c Sach rest for full body for 60 mins, then about 6litres of grain with some wort removed for boiling. Decoction brought to boil, whilst main wort temperature raised for mash out slowly. Mash out at 75 c.
Started with 22.5 litres of water, after sparge there was about 24 / 25 litres, after 90 min boil and decoction, I was left with only about 18 litres and had to liquor back to get to desired SG and volume of 1.053 /54.
Next time start boil with more water.

Notes: Mix salts in water
Heat 20 liters to 70 degress (verify number with notes at home) for mash
reserve 20 liters for lautering and additions during boil.
Measure temperature after grains have been added.
Add cold/hot water to adjust. Put kettle in duvet.
Remove grains from kettle. start heating the kettle while lautering.
Add lauter water to kettle
when boil starts, add 60 min hops
at 15 minutes, add cooling equipment, yeast nutrition, clearing agent.
at 10 minutes add hops
at 0 minutes start cooling while whirlpooling
at 25 ish degress stop cooling.
remove cooling equipment, remove hops, whirlpool and rest for 30-60 minutes.
tap in to fermentation vessel, add rehydrated packets of yeast. oxygenate. clean up, profit. |

Notes: Cut pumpkin,and squash in half scoop out insides bake until meat is soft , scoop out insides from shell, you are going to add this to the mash.....vanilla beans, roast pumpkin seeds from pumpkin and squash, add cinnamon sticks, peel a 3 inch ginger root and cut into half inch pieces, all spices go into the secondary.
use only 2 whole cloves per 5 gal.
Steam cinnamon sticks to get more flavor and kill bacteria i was told there is a lot of it inside of so just be safe.
Sugar goes in at 60 min. boil
dry hops go in the primary
Heat mash water to 170 to hit mash temp of 153 after adding grains
One week in primary, two weeks in secondary, then keg.
be careful of a stuck mash tun use 1.50 quarts per pound of grain and add some rice hulls |

Notes: A fairly low hopped, smooth stout.
Pure cocoa powder adds some bitterness that is not measured in the stated IBU.
Friends that really don't like normal stout very much enjoyed my previous version of this due to it's low bitterness and smooth texture. The amount of cocoa used only adds very subtle flavours - do not expect it to taste like dairy milk. |
