he creado unperfil para hazy ipa... basado en el libro the new ipa y tambien buscando perfiles en BF parecidos.
OBTENGO 56,5 LITROS PRE-BOIL A UNOS 1055 APROX. Y FINALES UNOS 48 LITROS DESPU´S DE 90 MINUTOS DE HERVIDO Y UNA DENSIDAD DE 1062 AUNQUE EL TILT ME DA 1067.

EN EL MASH, DES DEL PRINCIPIO, LE PUSE 80 GRAMOS DE APOLO EN FLOR, BUSCABA UN LUPULO EN FLOR PARA NO PONER PELLET.
EL HOP STAND LO HICE A LOS 85 GRADOS Y PUSE LA OLLA PARA QUE NO BAJARA DE 80. LUEGO TRASVASÉ AUNQUE DURANTE EL TRASVASE SI QUE DEJÉ QUE FUERA BAJANDO HASTA UNOS 77-76 GRADOS. NO VEO CUANTOS LITROS FINALES HAY PERO ESPERO QUE UNOS 40 APROX. EL COLOR ERA TURBIO PERECEDERO Y UN COLOR AMARILLO-DORADO BASTANTE BONITO.
LE PUSE 2 SOBRES DE LEVADURA Y TARDÓ MÁS DE 24 HORAS EN FUNCIONAR, HASTA LAS 36 HORAS APROX NO EMPEZO A BORBOTEAR. LA IDEA ES QUE CUANDO SE APROXIME A 1025 O EL RITMO BAJE CONSIDERABLEMENTE, PONER LUPULO EN DH.
TENDRÉ QUE HACER BARRIDO CON C02 PARA INTENTAR NO OXIGENAR Y PASADO LOS 2 DÍAS DES DEL DH, TRASVASAR EMPUJANDO CON MUY POCO CO2 A 2 CORNIS DE 19 LITROS, O UNO DE 19 LITROS Y 2 DE 9 LITROS!!.
A BIRRA ESTÀ EN EL FERMENTADOR SSBREW DE 14 GALONES, DENTRO DE LA NEVERA Y ESTOY INTENTANDO QUE LA FERMENTACIÓN SE MUEVA ENTRE 19 Y 22 GRADOS COMO MUCHO, HACIA FINAL DE LA FERMENTACIÓN IGUAL LE DEJO SUBIR A 22-24 GRADOS.
en el gràfico se puede que ver que he ocnseguido que la temperatura de fermenación estè controlada. la densidad final ha llegado a 1021-1020. cuando alcanzó la densidad de 1030 le metí el lúpulo pero antes puse CO2 en el fermentador a traves de la valvula pequeña de muestra. después de meterle el lúpulo, un par de veces al día repetí ponerle CO2, muy suave (el aire sale por el blow off) para remover el lúpulo yq ue este en contacto con la cerveza. le dejo unos 20-30 segundos cada vez.
estuvo 3 dias con el lupulo (lo metí sin bolsa ni nada), el primer dia fui bajando la temperatura poco a poco hasta las 12 grados, el segundo dia bajo hasta los 5-4 grados y el 3er dia estuvo en frío a esa temperatura. el 3er dia trasvaso metiendo muy pocos psi (lo minimo) por el blow off i descargo por la valvula de muestra (debería hacerlo por la intermedia ya que tengo la valvula para corni..ghrhrhrhrh) y me sale unos 17 litros en un corni y unos 12-13 litros en otro. yo creo quue habrà unos 30 litros.
el color de la cerveza es bonito, dorado y vivo. no veo que tenga ningun signo de oxidación. huele muy bien, la pruebo y me rasca un poco y me molesta la hierba que sabe pero tambien noto otras cosas muy interesantes. està verde. le pongo 2 kg d epresion a cada corni y los meto en la nevera a la espera de que mejore.
con el tiempo el amargor se vuelve menos fuerte y en la botella se ve la cerveza turbia. quizás un poco más de gas hubiera ido bien porque le cuesta hacer espuma.
Cosas a mejorar para que no haya tanto amargor.
1.Poner 50 gr de lupulo en el mash
2.en lugar de 50 minutos entre 85 y 75 grados (mas el trasvase), bajar a 30 minutos.
3. Poner menos lupulo en general y repartirlo de manera que haya más en dry hop que no en whirpool (ahora esta al 50%, hacer un 40-60%)
4. poner lupulos con menos alfaacidos porque con medias de entre 16-18 %... quizàs acabe aportando amargor.

Notes: Nos primeiros 3 dias estava com GOSTO muito intenso de lúpulo.
DELICIOSO.
Lembrava fruta de caroço.
Depois disso a cerveja oxidou muito rápido, diminuindo muito o gosto.
AROMA ficou muito discreto e conforme oxidou foi diminuindo mais ainda.
Apesar da cerveja permanecer muito saborosa, oxidou.

Apesar de ficar HAZY como eu queria, poderia ficar um pouco mais clara e mais vibrante - talvez a oxidação influenciou nisso

Antes da oxidação aparecer, estava uma cerveja espetacular, super refrescante. talvez DIMINUIR a carbonatação.
Sensação na boca, de 0 a 5 = 4
Macia, sedosa, imensamente saborosa.
Impressão geral, de 0 a 10 = 6.5 |
