2.5 gal Tap Water
4 Gallons Bottled Water – Note: even though this is a 5 gallon recipe, you will need extra because of the fluid loss during the boil process
1.5lbs Briess 2 Row
1lb Briess Caramel Vienne 20
.5lb Carahell
5oz Carapils
6lbs Mutons Amber Liquid Malt Extract
1oz Magnum
1oz Mosaic
1oz Simcoe
1oz Horizon
1 Safale US-05 Ale Yeast
Procedure:
Start with 2.5 gal tap water, add grains to water and heat to 165 degrees and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME and return wort to boil
Add 1oz Magnum hops and boil for 60 minutes
Add 1oz Mosaic hops and boil for 15 minutes
Add 1oz Simcoe hops and boil for 10 minutes
Add 1oz Horizon hops and boil for 5 minute
Cool wort to 70 degrees
Add enough bottled water to bring the specific gravity to 1.057
Add Safale US-05 Dry Ale Yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 4-5 days
Reduce CO2 to 5-7psi, pour and enjoy

This recipe features 2 extract additions: The first addition will be at the beginning of the boil, and the second will be at flame-out (the end of the boilwhen the heat source is turned off).
1. Add 2.5 gallons of water to your 5-gallon brew kettle. This is known as your strike water.
2. Pour the specialty grains to your large muslin bag, and gently place them into the strike water. This is now called the mash.
3. Begin heating the mash to around 170ºF/76ºC. After you have
reached your target temperature, turn off the heat and let the grains steep for another 10-15 minutes. Remove the bag, allowing it to drain any excess into the kettle, and then dispose.
