Notes: Add 3 gal of Cider Hill Apple Cider to the primary fermenter. Add 2 campden tablets, cover and add airlock. Wait 24 hours.
Add 15 drops of pectin enzyme.
Boil 1 lb of brown sugar and 1 tsp of yeast nutrient in 2 cups of water and add to primary firmenter.
Take temperature sanitize yeast packet and add to primary.
After 3 to 5 days and there is still activity in the air lock, siphon to secondary carboy and place stopper and airlock in carboy. Allow bulk aging for 3 months. Check specific gravity and when it is the same on consecutive days bottle or keg as desired.

Set out yeast
Bring 320 oz water to boil (four x 72, one x 32)
Slowly add half of DME and then bittering hops. Set 15 minute timer.
Slowly add rest of DME during last 5 minutes of timer.
Add about 4 inches of cold water to fermentor.
Cool to 150 with chiller, stop, and add whirlpool hops. Set 15 minute timer.
Continue cooling after 5 minutes. Should hit 93 as timer runs out.
Pour into fermentor, including all hop debris, and top off to 5 gallon mark.
Swirl fermentor well and pitch yeast.
After five days, add dry hops.
Transfer to keg after ten days and carbonate. |

Notes: Bright citrus flavors and a light, silky mouthfeel reminiscent of sunny days by the beach make this beer an instant Summer classic.
Noble German hops early in the boil and sweet orange peel make this beer fruity and balanced. The flaked grains in the grist form a thick, creamy head that persists through the entire glass.
A light haze should be present. If you want a clearer beer may use whirlfloc tablet for fining, last 5 minutes of boil.

- Add all steeping grains to steeping bag and steep as per your
preferred steeping method. Generally, 150*-160* F for 30
minutes.
- Remove grains, (sparge with 170*F water, 8 Oz.) bring back to
boil then turn off heat, and add extract.
Once extract is amply mixed, bring back to a boil.
- Once water comes to a boil, add bittering hops and start the 60
minute clock.
- After flame out cool wort to 80*-85* F, transfer to fermenter &
add cool/cold water to bring total volume to 5.1 gals. ( the
addition of cool water should bring Temp down to pitching Temp
(68* F)
- After Fermentation.... let sit on trub for 1 week then bottle.
- Add 1 Sugar Fizz Drop per 12 oz bottle when bottling.
- Condition in bottle for 3-5 weeks, timing is somewhat flexiable.
