0.75 tsp (3 g) Irish moss added 15 minutes before end of the boil (optional)
2 oz (56 g) fresh chopped ginger added to the boil (15 min)
2 oz (56 g) fresh chopped ginger added to secondary fermenter for 7 days
To brew the Summertime Ginger Ale, mash grains at 152° F (67° C) for 60 minutes. Mash out at 168° F (76° C), with pre-boil wort volume of 6.5 gal. (25 L).
Bring to a rolling boil for 60 minutes, add hops, honey, lactose, and ginger at specified intervals from end of boil. Chill wort to 65° F (18° C) and pitch yeast.
After 5 days, rack to secondary fermenter and age for another 10 days, adding remaining ginger for the last 7 days.
Keg at 2.5 volumes of CO2 or bottle condition with 4 oz (113 g) corn sugar. |

Give the yeast plenty of nutrients, either by producing a high gravity wort (OG >1.050), or by adding yeast nutrients for worts of lower gravity (OG <1.050).
Go easy on the bittering hops. Rapid kveik fermentations gives the beer a lower pH compared to other brewers yeasts, which can accentuate hop bitterness and make the beer astringent. For this reason it is often a good idea to shoot for a slightly higher terminal pH.
I also recommend using the same pitching temperatures as that of the original farmhouse brewers. This is the temperature denoted by ‘farmhouse pitch’ on the yeast packet.
Make a starter, and pitch about a teaspoon or more from the slurry. This will ensure your yeast is healthy, which makes for better fermentation performance.

Dough-in protease rest at 122F for 45 minutes. Saccharification temp to 147F for 50 minutes. 90 minute boil. Add soft sugar at boil initiation.
Add candi sugar at hot break. Chill to 64F. Pitch yeast. Pure O2 via 0.5 micron diffusion for 60 seconds. Ramp primary up to 76F over 6 days. At 1.013 dump primary yeast and chill to 50F for 4 weeks.
At 1.012 bottle prime in heavy bottles with Simplicity Candi Syrup at 34g/gallon and a fresh re-pitch 400ml starter. Hold bottles at 72F for 2 weeks for initial carbonation. Cellar for 3 months |
