Notes: Cool down to 100° and transfer to completely sanitized better bottle (that's what I use). If you have a pH meter, drop the pH to 4.2 with 88% lactic acid, if you do not then add roughly a tablespoon.
Add 2 super shots of goodbelly (each are 50 billion units), some people use a half to full carton of the goodbelly drink...I prefer the shots.
Seal up and leave at room temp for 36-48 hours. If it doesn't fall to yeast pitching temp on it's own, chill it using your preferred method (I have added a sanitized bag of ice, also have put in a fridge when I had room).
Pitch yeast and let ferment out. Dry hop after 7 days and dry hop for 7 days. |

Cream Ale Recipe
This is a very simple, inexpensive cream ale recipe that will get every BMC drinker in the room enjoying homebrew. So named because of the three different crops that go into the grist (Barley, Corn and Rice).
I brewed up 10 gallons of this and after kegging, bottled up a case to take to a family event (Mothers Day). Even my 78-yr old FIL, who is strict Miller Lite drinker, ended up having two pints. The chics dug it and we ran out well before the end of the evening.
The grain bill is cheap and in this case, you can use Minute Rice instead of flaked rice. No step mashing required. Simply combine the ingredients and follow a simple single infusion mash at around 152 degrees. I also mashed this for 90 minutes to get a highly attenuated beer. FG was 1.005...leaving a very dry, crisp beer with no noticeable graininess.
While this doesn't adhere to the strict beer laws, and I don't consider this one of my "craft" efforts, it is without a doubt the beer that I get the most "you really made this beer?" comments.
So if you've got some hard core "If it ain't Budweiser it ain't beer…" drinking friends…give this a try.
This beer clears up quickest of any of my recipes.

Notes: Kegged 3/12 - sample tasted great. Quick carbing.
3/14 Winner winner chicken dinner. Not much head, needs more carbonation. Dry as expected, great flavor, and despite the honey taking up part of the fermentables it still ended up in style and doesn't lack in anything. Nice crisp lawnmower beer. Prob add a tad of wheat next time for more head.
3/16 Increased the carbonation. The head problem is fixed, it now is nice and fluffy white. Persists pretty well. |

MASH SCHEDULE: SINGLE INFUSION
If you are new to all-grain brewing, we suggest starting with 1.5
quarts of water per pound of grain for the strike water volume. This
mash thickness can be adjusted for future brews as you become
more comfortable with your equipment.
· Saccharification Rest: 154° F for 60 minutes
· Mashout: 170° F for 10 minutes (optional) - to raise the temperature for mashout, gently apply direct heat while stirring well, or add near boiling water until the target temperature is reached.
Prepare sparge water in your hot liquor tank at a rate of 2 quarts
per pound of grain in the recipe, and perform a fly sparge until
you have gathered your pre-boil volume (6-7 gallons) in your boil
kettle. The sparge should take about an hour for optimal extraction
efficiency. You should end up with extra sparge water in your hot
liquor tank, you can use this hot water for cleaning later on.
This recipe calls for a 60 minute boil duration.
· Add 1 oz Chinook hops at the beginning of the boil.
· Add 0.5 oz Cascade and 0.5 oz Centennial hops with 2 minutes remaining in the boil.
· Add 0.5 oz Cascade and 0.5 oz Centennial hops with 0 minutes remaining in the boil. |
