Notes: This is a modified version of the Brew Dudes recipe. First, it’s 3 gallons not five, and I changed the hop dosage from 2oz of Challenger to 1oz of East Kent Goldings. And I spread out the hop dosage to 45, 10, and 0 minutes. Second all of the fermentables remain the same, but their amounts are slightly adjusted. The Brew Dudes video did not mention the mash temperature, so I arbitrarily set it to 152F. Lastly, I changed the Yeast from West Yorkshire liquid yeast to the Fermentis SafAle English Ale S-04, which happened to raise the FG a couple points.
The reason for these changes is that I generally try to fit my recipes within the parameters for ABV, UBI, and SRM, as prescribed by Brewers friend. |

Notes: Pressure ferment in corny keg at 5psi at room temperature 68-70F. 20-21C.
May change my mind on the yeast strain and go with WY2124 instead.
New notes(brew #1): Ended up brewing this with lower volume to fit in the corny keg and did not add the dextrose due to already being at the OG. Put it on nitro and poured with a stout faucet and highly recommend, super smooth and creamy mouthfeel. Krispy yeast did a very nice job.
New notes(brew #2): Original brew was 9lbs grain and 0.5lbs corn. Added additional corn (8lb grain, 1.5lb corn). Again ended up with higher than anticipated OG and did not add dextrose. This is amazing. Put it on CO2 this time and was excellent. Perfect clear.
New notes(brew #3): Reducing grain once again to allow for dextrose. (7lb grain, 1.5lb corn). Turned out perfect.
New notes(brew #4): Switching to BIAB and 10 gallons. Doubled all ingredients. |

Notes: Glacier and Palisade are both new-school American varieties, but with a slightly fruity, earthy, sweet-candy character that – to my nose – echo the high notes of some European hops and can play nice with old world beer styles. Pick one (or blend them!) and use ½ to a full ounce 15 minutes before the end of the boil. A half-ounce will give a subtle undertone that meshes with the malt and roast flavors, a full ounce will stand out more.
Mash low for good attenuation: being an easy-drinking beer means no sickly-sweet finish from a high final gravity, but the Cali lager strains we’ll use typically don’t attenuate like overachievers. To counteract that, we’ll mash a little on the low side to encourage more beta-amylase activity and a more fermentable wort.
Yeast starter for fast turnaround: not specific to Irish Reds, but in the interest of turning this batch around quickly – make a starter before brew day (consult your LHBS for the how-to and the gear) to minimize the lag time between pitching and fermentation. With a healthy pitch of yeast, we should be able to get from grain to glass in right around 14 days. |

Mash all grains at 156F for 1 hour and draw first runnings to kettle. Some amount of caramelization is desired in this beer.
To achieve this, take a two pints of the first mash runnings and simmer in a saucepan to reduce to a syrup, taking care to
not burn it. Do this while the rest of the wort is boiling. Sparge grains with 175F water to collect the full volume of wort.
Boil wort for 90 minutes, begin adding hops with 60 minutes left to go according to the schedule above and add the wort
reduction back to the kettle with about 5 minutes left to go in the boil. Chill to 58F and pitch yeast
Fermentation
Ferment on the cooler side of the yeast's optimal range, roughly 58F. The beer takes a while to mature,
so give it close to 6 weeks of time in the fermenter before kegging or bottling. |
