| Notes: On brew day, I decided to use yeast slurry from last batch of Herm’s Amber Ale. This slurry originated as White Labs 090 - San Diego Super Yeast, which should deliver a nice clean fermentation character. Using the yeast calculator on this site determined to use 0.125 +/- liter of slurry, which should be a strong pitch. |

Notes: Can sub honey for the cane sugar if you want a touch of honey character to complement the malt flavors.
French Strisselspalt hops for the late addition would be good as well.
Lots of possible yeast choices for Biere de Garde: Can use a cool-fermented hybrid strain like Kölsch or Alt (German Ale), a Belgian Ale strain fermented on the cool side (don’t want too high esters and phenolics, but some), such as WLP 515 or WLP 570/Wyeast 1388, a farmhouse strain like Wyeast 3726, or Wyeast 3725-PC (Biere de Garde), WLP 072 (French Ale) or WLP 073 (Artisinal Country Ale) would be ideal... if you can find any of them. Additionally, can use a lager strain fermented on the warm side.
Lager for 1-6 months, if you can wait that long!

Tasting Notes: A balanced APA with malt flavor, and hops flavor, for a nice APA.
5 pounds pale malt (I used marris otter)
3 pounds vienna malt
2 pounds Munich malt
1/2 pound crystal 20L
1/2 pound crystal 60L
1 ounce Cascade 60 minutes
.75 ounce cascade 30 minutes
1 ounce Cascade 10 minutes
1/2 ounce cascade 5 minutes
1/2 ounce cascade flameout
1 ounce cascade (dryhop)
I used homegrown cascade for the late hopping additions, so had to guestimate the final IBUs, but used commercial pellet hops for the bittering additions (8% AAU).
Mashed at 154. Fermented at low ale temps (62) for two weeks, then dryhopped for a week.
This beer is my attempt at Lakefront Brewery's Cream City Pale Ale. I don't know if it's close- we don't have any to compare it to! But i was going for a slightly bitter, malt forward, APA. It worked! This beer is balanced, but definitely an APA. It's our new "house beer".
Edited to add new information: I don't use S05 much any more as it never clears well for me and can have "peachy notes" I no longer like. I love WLP001 for this beer, which is very similar but clears a bit better with no "peach" notes. I also mash at 152 with my new system, as I get better attenuation that way. |

Notes: If you haven't had a Classic American Pilsener yet, you're missing out! This is the first one I've brewed, and also even tried, but I'm extremely pleased with the way it turned out. One of my best beers yet. If you are asked to give a style example when asked to define just "beer", this is what comes to mind for me. Just a great, balanced, easy-drinking, flavorful beer (not too hoppy, not too malty, not too light, not to heavy, etc... A real "Goldilocks" beer - just right!). Give this one a try.
I've used both WLP833 and WLP838... But a pilsener yeast or any good lager yeast would probably work very well also. |

4/8/19 - Batch #4 (Chai Spiced) - Eff.
- Same grist, yeast (M44) and water chem., new hop bill aiming to be a bit more neutral to allow Chai to show. No idea as to what hops to pair with Chai so left it the same as previous.

1/12/19 - Bottled the last few out of old keg, the flavour became a bit more spicy, would make again but at the start of winter. It's a warming beer that takes a while to finish
'Nuts In My Brown' Chocolate Hazelnut Brown Ale
2/12/18 - Batch #3 (NO COFFEE) - Eff. 66% Att. 65%.
- Same grist, hop bill and water chem as #2.
- Pacific Jade 10g @50 min, Pacifica 40g @10 min, Styrian Goldings 40g @10min.
- Switched 50 min Pacific Jade to first wort.
- Forgot to at the flaked oats (0.26kg) !!!!! Will see if this affects the beers mouthfeel.
9/12/18 - SG: 1022. Tastes quite sweet and chocolate.
11/12/18 - Added 5 drops of Chocolate Hazelnut Flavour (Lorann Oils)
14/12/18 - FG: 1022. Cold crashed. Finished very high, will let it ferment in keg for a few days before adding more flavour.
24/12/18 - Tastes good, quite mellow with restrained flavours, added 3 more drops of flavour. Force carbed for 2 min at 20 psi and left on 30 psi to carb.
6/4/18 - Batch #2 (62% Eff., ABV:5.29%)
- Ale malt upped to 5kg from 4.8
- Dark grains added with 15 min left in mash
- Coarse ground coffee (Sumatran Gayo) from Evolve
