Racking from a 6GA to 5 GA fermenter after krausen has settled is a great way to get a cleaner beer. I almost always do this.
Bottling day August 1, 2015 SG @ 29 days in fermenter FG 1.008. ABV=5.78%.
Rack to bottles: 18 X 22 oz. + 12 X 12oz.

Will first try Imperial A31 Tartan with starter instead of Nottingham, will ferment at 65°/5 days; 68°/5 days; 70°/5 days, then add gelatin and cold crash to 34° before kegging. |

Mashed in @ 163, target 148. Hit 145. Boiled the sparge and added another gallon. Didn't seem to raise the temp as much as I wanted, must have lost more heat than expected to the mash tun.
No starter -- WLP001 vial dated best by 3/6/15 --2 days ago.
Probably screwed up the IBU's. Did a 20 minute stand at flameout without cooling, intended this to be a Pale Ale and it's probably encroaching on IPA bitterness.
Will dry hop with ... to be continued. |

mashed this at 150, fly sparge, 90 minute boil. This one didn't get bottled until 10/22/12... A long time in the carboy, but it dried out amazingly! Smells awesome bottling... Labeled it as: 4 month funk: dark saison.
this one goes down smooth! pours a deep amber/brown with thick head that dwindles down to half a finger. the aroma is peppery with hints of orange. taste is complex - spices, less peppery than the smell though, toffee, malty, very rich. very smooth and drinkable. |

Notes: It turned out dry and tart, with some bitterness (too much to be honest). This beer is red, and so is the foam. If you like dry and tart with a nice natural fruit aftertaste, this might be your beer. I ended up finishing the beer with some lager yeast from a fresh yeast cake because the saison yeast stalls, as it frequently does.
Flowers and fruit sat for 7 days in primary. FG was 1.010 as expected. |
