Notes: I received this recipe from a local home store here in Olympia wa. The owner said he received the recipe from a descendant of the original owners of the Olympia brewery. The recipe did not come with mash schedule just the boil time, hop additions, and grain bill. The mash schedule I chose I'm guessing will produce a similar beer to the original. |

"Re-hydrated 71B-1122 yeast with Go-ferm, pitched into must (with 8oz lime juice) after being properly mixed and oxygenated. Staggered nutrient additions over 5 days of DAP and Fermaid K (amounts per mfg.) Degas for 10 days. Add 8oz of key lime juice (or to taste) when racking. Super Kleer at packaging"

Notes: This should be the actual grain bill. You'll have to play around with the hops to get the 25 IBUs. The batch in the picture above, glass 1, was (to me) indistinguishable in flavor with the actual product. There was a slight difference in SRM
I love this beer and needed this recipe to fill in the gaps when it isn't available, which in my area is 50 weeks out of the year.
Protein rest at 122 for 30 minutes. Heat to 156, rest for 30 minutes, then sparge. |

Notes: Traditional Norwegian farmhouse ale uses pale malts. Although wort is often fermented "raw" (that is, without boiling), this recipe uses a very short 10 minute boil to sanitize the wort and produce some bitterness from the hops.
The malt bill is adapted from my saison recipe. I also use Styrian Goldings hops in my saison, and since most Norwegian recipes I've found don't give much information (the closest says "any central European Nobel hop" should work), so, Styrian Goldings it is.
Except for this iteration (5/11/17), I'll be substituting Hallertau Mittelfruh, added to the mash, and Cascade and Lemon Drop added at the beginning of the boil and at 5 minutes. Remember, this is only a 10 minute boil.
This beer will be fermented warm (80F) with traditional Kveik yeast.
If I could add anything to this recipe, it might be some juniper branches.
