Notes: - Consider using brewing salts.
- Use sour tub.
- Remove 1cup of grains before mashing to use as sour starter.
- Add back to mash following 60mins mash.
- Cover mash with weighted plastic and cover.
- Leave mash in tun for 36 hours at 46-49C to kettle sour.
- Heat back to 77C to mashout and sparge, continue as normal.
- Add sea salt at end of boil.
- Primary ferment 2 weeks at 20C.
- Transfer to secondary, add grapefruit peels and sit for four weeks at 21C.
- Bottle and sit for further four weeks. |

Soak .25 oz French Oak chips in one cup Kentucky Bourbon for 2 days. Soak ground kona coffee in 1 cup boiled, cooled water and leave overnight, covered in refrigerator. Strain out grounds and add cold coffee and bourbon, with wood chips to secondary. Rack fermented stout into this mixture and condition in secondary at 55-60F for 2-6 mos.

Here's a recipe from Jul/Aug 2010 Zymurgy. The recipe was built with guidance from Jeremy Kosmicki, Founders head brewer. My buddy made this and it was as good as, or maybe even better than, the real deal. Per the article "this is not an exact ounce-for-ounce recipe, but the brewery was able to share proportions".

Notes: Used 2Kg of Maris Otter milled 1-2months ago, which could explain for the efficiency loss. Also overshot on water and got 28L after boil instead of the expected 24L.
This snapshot has been updated to reflect the changes during brew day, original recipe is left alone, turning the recipe into a session hazy IPA more than a proper NEIPA.
24/08/2019 10am - One of the weights on the iSpindel moved while on the fermentation tank, thus screwing all the gravity readings. Might be better now as the weight is back in position, but need recalibration. |
