Notes: 1. Mash in @ 125F (hold for 20 min)
+ add graham cracker
2. Raise to 154F ( hold 60 min)
+ 1 tsp enzyme
3. Sparge with 2 gal @ 165F for 10 min
4. Collect 7.5 gal for boil
5. Boil 75 min
+ 2.5 tsp yeast nutrient @ 8 min
+ 1 irish moss @ 10 min
6. Cool to 70F and pitch yeast
7. Ferment for 10 days
8. Move to secondary for dryhops

Notes: Mash got a little low temp so I did a short decoction on part of it. Very crisp and good malt flavor. Don't change. Just learn how to keep the oxygen out while bottling. Fermented in the basement in the optimum range (53-59*F) of the Saflager 34/70 yeast at around 57 degrees. Bottle conditioned 3 weeks at 70*F. Tastes better the longer it's in the fridge.
