Notes: This is a really balanced, slightly malty amber beer with a touch of roasted flavor.
The IBUs are so high on this, it is out of style for an Okto, but that doesn't matter to me.
*** NOTE: Not as good as using lager yeast. Won't be trying a 'mocktoberfest' again.
The flavor profile reminds me of a porter or stout. I think this yeast would do much better in a brown ale. The complex notes the hops are supposed to impart are being overridden too much by a harsh roasted maltiness. I don't think that is coming from the grain bill. Drinkable, powerful tasting beer, but not what I was hoping for.
In summary, screw Mocktoberfest, stick with Oktoberfest and larger it. |

Notes: the original recipe called for 6 oz of pale chocolate but substituted 3oz carafe 1 instead of the chocolate and it turned into a brown instead of red but was good nun the less, smokey flavor was there and after getting used to it, turned into a great evening sipper
I had to use a 5 micron filter with this beer because of syrupy sediment but this beer turned out very high alcohol and a very good flavor, I can't believe how quick this gets to you |

Notes: 1. Steep grains at 153 for 25 minutes in 2.25 gallons of water. I used kettle that's not my brew kettle for this step.
2. After the 25 minutes is up, I poured the warm grain water back over the grains into my brew kettle.
3. Fill the brew kettle to 3.75 gallons of water.
4. Pour all DME into the cool water and stir in.
5. Start boil and follow the hop schedule. I use a hop bag.
6. Cooled wort. When wort cooled to 180°F, added the HS hops; 1.25oz Centennial, 2oz Mosaic, 1oz Citra. Let sit for 25 minutes as the wort cools.
7. Dropped temp to 69-70, filled carboy, topped off to 5 gallon mark, pitched yeast.
8. Nine days into fermentation, I added the dry hops.
9. (14 days from brew day) Measure out your priming sugar solution. Bottle.
10. Wait two weeks. Enjoy. |

Notes: Mash grains for 45-60 mins then pour hot water over BIAB to sparge off excess sugar.
Mash temp 158f. Higher levels give a less fermentable wort and a more full-bodied beer.
Roast Cocoa nibs at 300 for 10-15 minutes.
Add cocoa nibs, dark bakers chocolate and first addition of coffee at flameout. You can skip this coffee addition for a more balanced or less coffee flavored beer. Then maybe only do .5oz coarse ground coffee in secondary.
Filter off hops, coffee, cocoa into fermenter.
After ferment rack onto coarse ground coffee for 7 days. Coffee can be soaked overnight in vodka.
Coffee Must be coarse!
I boil about 1/4 gallon every 15 mins in a 4 gallon (16 quart) kettle so it took me an hour to boil off 1 gallon. I adjusted recipe to start with 2 gallons.
Head Retention: It's possible oils from the cocoa or coffee beans can reduce head retention. Choose dry beans. Or soaking them in vodka can help.
