All-Grain

MALT/GRAIN BILL
8 lb (3.6 kg) 2-row malt
8 lb (3.6 kg) malted oats
0.5 lb (227 g) honey malt (optional)
HOPS SCHEDULE
1 oz (28 g) Amarillo at 15 minutes
1 oz (28 g) Mosaic at 5 minutes
2 oz Citra (57 g) at whirlpool
4 oz (113 g) Citra at dry hop
6 oz (170 g) Mosaic at dry hop
6 oz (170 g) Amarillo at dry hop
YEAST
For a very hazy beer, you can’t go wrong with Wyeast 1098 (British Ale) or Wyeast 1318 (London Ale III). For less haziness, greater attenuation, and a more neutral ester profile, Chico (Wyeast 1056 American Ale) is a safe bet. If you opt for either of the English strains, make sure to do a thorough diacetyl rest because even with the substantial amount of hops, you will notice the diacetyl if it’s there.
DIRECTIONS
Mash at 152°F (67°C). Boil for 60 minutes, following the hops schedule. Chill and pitch the yeast as usual.
BREWER’S NOTES
You’re going to need to tighten down your mill because malted oats are skinny and their husks are invincible. At the very least, you can probably get away with sending them through a few times. Be careful during your lauter because this will likely transfer a lot faster than you are used to.
Feel free to adjust the hops quantities based on your specific water profile. We prefer soft bitterness in our hoppy beers, so if you know that these additions will be overkill based on your experience with your own recipes, then by all means change or ignore the ones here. Or just load it up with gypsum, whatever suits your taste best! |

Notes: This was my first all grain batch and decided to go big or go home. I realized a few things before I started. My lauter was definitely not large enough so I bought a bigger one and improvised.
I missed temperature on the Mash, hit 160+ and had too much volume to add cold water so I just went with it. I mashed out at 172.
I plan on main fermenter at least 2-3 weeks if not a month to a month and a half. Secondary will go as long as I can stand.
I don't want to be too pushy with this batch with the hop schedule as big as it is, I mean 4 oz at boil start, and another 7 at 10 minutes. Its a beast. |

3 lbs pie pumpkin (boil)
4 oz molasses (preferably blackstrap)
4 oz maple syrup (preferably grade B)
1-3 tsp spice mix (Editor: see below for recipe)
2.5 lbs pie pumpkin (secondary)
Mash at 156° F for one hour, sparge per your setup to collect ~6.5 gallons wort. During your mash your pumpkin should be in the oven roasting (375 1 hr, toss with brown sugar and some spices, back in oven for 10 min)
(optional) Toss your cubed pumpkin in brown sugar and spices.
Toss your hops, boil for an hour, and kill it. I toss my spices in at flameout (1 Tbs)

Notes: - Water used: North Yorkshire tap water.
- 65 min mash @ 65.5ºC (some small fluctuations, overshooting by 1º ish). Recirculating throughout.
- Sparge with around 2L of 65-70ºC water.
- 75 min boil: Chinook added after 15 mins, Lactose + sugar added after 65 mins. Do not add whirlfloc or Irish moss, this beer wants to be cloudy.
- After boil, top up with water if needed.
- Late hop additions (hopback) @ 85ºC for 15 mins, finally removed once wort was at pitching temp.
- 3 dry hop additions, first after 3 days in fermenter, second 3 days later and final 2 days after that. Each time removing the previous addition to avoid grassy flavours.
- Half a Vanilla pod added 2 days after the final addition of hops when all fermentation was complete. Leaving the hops in with Vanilla for 2 days before bottling.
Fermentation was in 10 days @ around 20ºC, might have dropped a bit at night so it could have finished in even less time.
I bottled using light DME spray malt, ideally I wold have used an extra light version to avoid too much discolouration. However the final product is a deep and hazy orangey-brown colour, reminiscent of freshly pressed juice!
Ultimately it smells, tastes and looks extremely professional. I would go with more lactose next time and maybe add Huell Melon to the hop profile.
