Notes: In 6.5 gal bucket/carbon, add 1.75 gal RO water to the 3.5 gal wort after chilling to fermentation temp (68). Oxegenate, then pitch both the 550 and the Rosealare Blend at the same time. After about a month, rack to 5 gallon carboy (with minimal headspace) and add oak cubes (boil in water about 10 minutes to sanitize and reduce harshest flavors) and any bottle dregs. Bulk age/ferment for about a year or to taste.
Won third place 2018 Cactus Challenge, European Sour Ale and American Wild Ale category. |

Notes: This is the 6th edition of my Hoptaculus Double IPA, which is based off of the Pliny the Elder recipe.
NOTE: BrewPrint duplicated each hop addition 4 times from the BeerSmith import, and I'm too lazy to fix it - so ignore 3 out of 4 of each of the hop additions. |

Notes: 4/25/15: Started 2 liter starter of Wyeast 3711 and a 3 stage starter of WLP644 to be split between the European and American hopped saisons.
5/3/15: Brew day. Added too much water and ended up undershooting the target gravity by .004. This was just as well, as the hop pellets and trub absorbed almost a gallon. It ended up being even less of an issue than I thought, since the melange of yeasts was a monster, reaching 92% apparent attenuation.
5/9/15: Raised the temperature to 72ºF.
5/25/15: Added dry hops late at night.
5/28/15: Bottled with table sugar for 2.4 volumes of CO2. Final gravity 1.002, 4.8% abv.
6/15/15: First tasting. Hazy, straw colored with a soft white head. Fantastic aromas of sauvignon blanc, peaches, pepper, clove, tropical fruit, and a hint of funk. Taste is more of the same, with a small amount of resiny stickiness from the hops. By far the best beer that I've ever brewed. |

90 minute boil with hops, adjuncts and nutrients as needed. Chill to 64F. Oxygenate slowly through 0.05 micron diffusion
for 90 seconds (we’re after 9-10 ppm O2). Ramp primary from 64F to 76F through 7 days. At 1.013 rack off primary yeast
to secondary and cool to 55F. Hold for 5 days+ until the FG of 1.012 is reached. Dump yeast a second time, lower temp
to 40F and hold for 6 weeks. Bottle using heavy Belgian bottles or Champagne bottles. Prime with 31g/gal Simplicity
Candi Syrup and re-pitch 350ml Westmalle stir-plate. Bottle re-ferment for 14 days at 74F. Cellar for 12 months. |
