Notes: This is a quick easy (DME) experiment using Meridian hops. I had a Meridian pale ale and was very surprised! Meridian gives a nice smooth juicy lemon flavor.
In the hop listing add .15 Citra & .15 Meridian at 0 min flame out for aroma and flavor. Let it Hopstand (I used whirlpool for lack of option) for 10 if sanitary for some IBUs. Otherwise this is a great Pale Ale too.
After fermentation (give it 2 weeks) dry hop with .20 Citra + .20 Meridian for another 3-5 days.
Transfer to secondary and cold crash (if you can) for a day or two before priming and bottling. |

| Notes: Place the grains in a large nylon bag. Partial mash the crushed grains in 2 gallons (7.7 L) of water at 150 ºF (66 ºC) for 45 minutes. Remove the grains and place in a large colander. Wash with 2 gallons hot wash. Add water to make 6 gallons (23 L) of wort, add dried malt extract and bring to a boil,. Boil for 60 minutes, adding hops at the times indicated in the recipe list. Cool the wort and transfer to fermenter. Aerate and pitch yeast. Ferment at 68 ºF (20 ºC). |

Notes: In 6.5 gal bucket/carbon, add 1.75 gal RO water to the 3.5 gal wort after chilling to fermentation temp (68). Oxegenate, then pitch both the 550 and the Rosealare Blend at the same time. After about a month, rack to 5 gallon carboy (with minimal headspace) and add oak cubes (boil in water about 10 minutes to sanitize and reduce harshest flavors) and any bottle dregs. Bulk age/ferment for about a year or to taste.

Notes: This recipe calls for a total of 3 lbs of fresh blueberries. Wash them thoroughly beforehand.
While the wort is boiling, put the blueberries in a large pot with some water and bring to a gentle boil. Reduce heat, cover and cook until the blueberries have broken down into a syrup. Let it cool and then add to the primary fermenter using a funnel before pitching the yeast. Make sure to use a blow-off tube, as the fermentation can be extremely vigorous.
Leave here for 2 weeks, then keg as normal.

After 5 days of bottle conditioning I stuck one in the fridge overnight. It already has plenty of carbonation with a nice thick 2 finger foamy head. Banana's and cloves are obvious on the nose and mouth. It still is pretty "green" tasting so I think another week of conditioning will help that.Very close to Hoegaarden in taste. This is my first liquid yeast try.
I'll definitely drop the extra 11 oz. of DME next time. I don't want the ABV that high. |

Notes: My son sent me a pic of this beer he enjoyed in Chicago. Asked if I could duplicate. BA has it at 91 which is pretty respectable. I'm going to give it a go to get it really close and impress the neighbors. this version is using extract and partial mash. I will work up an all grain once I get my 2-row in.

Fist City, a crushable Chicago pale ale named after the Loretta Lynn tune. It is brewed with lots of 2 row and red wheat with a little specialty malt for a beautiful golden hue. A blend of Centennial, Citra, Chinook, Cascade and Crystal hops give the beer its flavor and aroma. This beer is meant to be a supremely drinkable brew for those who love hops. Magnificent California hop aromas play in perfect harmony with this brew’s extremely satisfying finish.
ABV: 5.5% IBU: 40 SRM unknown; this recipe is from one I found on the web and have no comments as to its closeness to the beer. My son is visiting for Christmas and will bring some home to compare with this batch I plan to brew. certainly a complex hops schedule. |
