| Notes: Mashed in Blue Cooler, sparged as asked. Even though it was a 5 gallon recipe batch, when it was all done with the boil, and I topped just over 4 gallons my OG was 1.048 and recomennded was 1.049 so I left it. Added 2.9 oz of dextrose in 1 cup of water to final beer. Had a minor spill that cost me about a beer to a beer and a half. Ended up with 37 bottles using black caps. CAN'T WAIT for this brew! |

Whole raspberries frozen and pasteurized before adding. Im not sure when exactly I added them but i let it sit on the raspberries for a few months
From conversation with Chris regarding the raspberry addition : "i think it was about 3 weeks in primary and then raspberries added to secondary for several months until it had the sourness I wanted. wlp630 takes a long time for the lacto to get going"

Notes: 4/25/15: Started 2 liter starter of Wyeast 3711 and a 3 stage starter of WLP644 to be split between the European and American hopped saisons.
5/3/15: Brew day. Added too much water and ended up undershooting the target gravity by .004. This was just as well, as the hop pellets and trub absorbed almost a gallon. It ended up being even less of an issue than I thought, since the melange of yeasts was a monster, reaching 92% apparent attenuation.
5/9/15: Raised the temperature to 72ºF.
5/25/15: Added dry hops late at night.
5/28/15: Bottled with table sugar for 2.4 volumes of CO2. Final gravity 1.002, 4.8% abv.
6/15/15: First tasting. Hazy, straw colored with a soft white head. Fantastic aromas of sauvignon blanc, peaches, pepper, clove, tropical fruit, and a hint of funk. Taste is more of the same, with a small amount of resiny stickiness from the hops. By far the best beer that I've ever brewed. |

| Notes: Prepare a 2L yeast starter. Mash the two-row malt, wheat malt, and flaked oats in 5 quarts of water. Hold temperature at 154°F. for 60 minutes. Strain the wort into the brew kettle, then rinse grains with 1 gallon of water at 170°F., collecting run-off in the brew kettle. Mix in liquid malt extract and add clean water to bring boil volume to 3.5 gallons. Bring to a boil, add hops, and boil for 60 minutes. Add the orange peel and coriander in the last 10 minutes of the boil. Chill wort, top off to 5 gallons, and stir to mix and aerate. Pitch yeast and ferment at 65F for one week, then transfer to secondary for two weeks. Bottle with 5oz corn priming sugar and condition for two weeks. Optional: serve with a slice of orange. |
