Notes: Collect 18 liters of water in the big brewing kettle. Heat water og add DME. Stir well. Bring to a boil.
While heating water in the big kettle, heat 8 liters of water in a smaller kettle to 70 degrees C. Perform partial mash and do a 3-liter sparge after mashing for 45 minutes.
Remove the grain bag and add the wort to the big kettle. Bring to a boil, and add hops according to the recipe.

1 pound Munich
1/2 pound crystal 40L
Steep grains in a bag at 155 degrees for 30 minutes. Sparge with 1/2 gallon 170 degree water. Allow grains to drip into pot, but don't squeeze. Discard grains. Bring to a boil and add:
4lbs Alexanders Pale LME
4LBS LDME
(I substituted all XLDME)
1 oz perle 60 mins
1/4 oz perle 30 minutes
1/4 oz perle 5 mins
1/4 oz saaz 5 mins.
1 tsp Irish Moss 15 minutes or Whirlfloc
I used pacman yeast. If pacman is not available, try 1056 (American Ale yeast).

100 g de malt légèrement torréfié par prononcer la couleur de la bière a été ajouté à la maische.
-Maische pas beaucoup sucré possiblement à cause de la T élevée de l'infusion.
-Rinçage des draÎches à l'eau chaude du robinet.
-250 g de miel (pâle) de Framboisier ajouté durant l'ébullition
--L'extrait de malt provenait de «Fleur Sauvages» et a été ajouté pendant l'ébullition.
-17 sept.: transfert en «tourie» (un 4 litres et un 8 litres d'eau de source).
J'obtiens 10 litres de moût mais je réalise, quelques jours plus tard, que j'aurais dû couper le moût avec 2 litres supplémentaires d'eau car la «bière» est très forte!! (j'ai complété le gallon à demi-vide par 2 litres d'eau de source, ce qui a fait une bière faible.
-Pour 8 litres de bière à refermenter en bouteilles, ajouter 50 gramme de sucre et 1,3 litres d'eau. |
