Notes: Starter from Velvet Elvis @ 8.6% ABV. Salvaged 3 full litres of slurry. Washed to 2 litres. Starter to (3) each 1/2 gallon. Aeration with pump for 20 min plus shaking.
Sugar addition on day 3-5
2# dextrose with 1/2 gal wort pulled from fermenter, plus .5 oz mosaic per batch. 1/2 gallon of wlp099 added to batch.
Day 3
Day 5, pulled another 1/2 gallon of blowoff slurry. Airated and added to batch with Dextrose.
Airate each addtion with 20 min airpump.
Kept on going to 1.015! |

♦ STANDARD BREWING NOTES:
60 minutes – Add 2 drops Fermcap
60 minutes – Add 5 tablespoon Gypsum for IPA
15 minutes – Add Immersion Chiller
15 minutes - Add Whirlfloc
10 minutes – Add 1 teaspoon Yeast Nutrient last
♦ Check to see if nozzle is pointed upwards
Create 7 gallons sparge water. Bring to 154° strike temperature.
Prime pump. Push water through hose.
60 minutes – Add tablespoon 5.2 pH balancer.
Add grain – Sparge at 144-152° for ___ minutes (Minimum 60)
(One gallon loss during sparge process)
Water burn rate: 1-1/2 gallon per hour.
Drain GRAIN from kettle. Adjust water height of ___ (7 gallons)
Boil clean water for end of boil session adjustment.
Mash Option dark beers – Add x tablespoon Calcium Carbonate

Notes: After Sparge….raise temp and boil wort for 10 min...turn off burner chill to 95F and add the Lactic Acid to a ph of 4.5...Add the Mango Goodbelly drink, purge with C02, cover with cellophane and wrap in a blanket...maintain at 95F for 24 hrs.....then test for PH...target is 3.3 - 3.5, boil recommended time then chill to 65F

| Notes: Preheat oven to 350°F (177°C). Chop the carrots into chunks and roast with about a cup (237 ml) of water until the carrots are soft and starting to caramelize. Remove from oven. Add the water with carrot juice to the boil kettle at the beginning of the boil. Put the carrots in one fine mesh bag and the dried leaves in another fine mesh bag before adding them to the boil. |

I want to know firsthand what molasses taste like in a brew.
Tap water to 1.25L, DME boiled but molasses added to sanitized 2L mason jar. I will pour the wort off the boil into the mason jar in an effort to keep some of the molasses aroma. Added a pinch of Fermaid-K at pitching.
Update- was very homebrew tasting, hadn't had a funky brew in years a little oxidized but shouldn't have been with a pin hole saran wrap and only a week old. Not pleasant.

- Start the yeast at 70f for 1 day, then ramp up naturally to 78-80F, maintain till FG is reached then condition in bucket or carboy for 1-2 weeks at 70F till final gravity,target ferm temp is 79F ±2. Should ferment very dry.

- Maybe skip the cane sugar addition and just keep it simple. (6Oz if used)
