Grain Bill:
11 lbs (5 kg) Pale Malt (2-row): This will provide the base and backbone of your beer.
1 lb (0.45 kg) Munich Malt: Adds a touch of malty sweetness and complexity.
0.5 lb (0.23 kg) Caramel/Crystal Malt (40L): Contributes to body and a slight caramel flavor.
0.5 lb (0.23 kg) Vienna Malt: Enhances the malt profile with a slight toasty character.
Hop Schedule:
Bittering (60 minutes):
0.5 oz (14 g) Magnum: A high-alpha hop ideal for clean, smooth bitterness.
Flavor (20 minutes):
0.5 oz (14 g) Chinook: Adds piney, resinous, and slight spicy flavors.
Aroma (10 minutes):

Yeast:
American Ale Yeast (Wyeast 1056, White Labs WLP001, or SafAle US-05): A clean, neutral yeast that allows the hop flavors to shine through.
Brewing Process:
Mash:
Mash the grains at 152°F (67°C) for 60 minutes to achieve a balanced fermentability, which will provide a good body while allowing the hops to be the star.
Boil:
Boil for 60 minutes, following the hop schedule above.
Whirlpool:
After boiling, chill the wort down to 170°F (77°C), then add the whirlpool hops and steep for 20 minutes. This helps to extract flavor and aroma without too much bitterness.
Fermentation:
Chill the wort to around 68°F (20°C), pitch the yeast, and ferment at 67-70°F (19-21°C) for about 2 weeks or until fermentation is complete.
Dry Hopping:
After primary fermentation is complete, add the dry hops and let them steep in the beer for 5-7 days.
Packaging:
After dry hopping, cold crash the beer for 2-3 days to help clarify it, then bottle or keg the beer, carbonate to about 2.5 volumes of CO2, and enjoy!
Tasting Notes:
Expect a beer with a golden color and a strong hop aroma featuring a mix of pine, citrus, tropical fruit, and subtle herbal notes. The bitterness will be assertive but balanced by a clean malt backbone, making this IPA a crisp, refreshing, and flavorful brew that showcases the unique qualities of each hop.

Notes: Brew 1 notes: 2/5/21 Didn't take any, but the beer was so frickin tasty.
Brew 2 notes: 5/1/21Used tap water, no adjustments. Had approx. 30L to start, 16L in Mash and 14L in sparge. Had 25.25L pre-boil volume in kettle, 22.0L post boil (60min) and transferred 21.0L into fermenter with the valve closed.
OG: 1.058, FG: 1.006, 6.8% ALC. Fermented at an average of 20°C.
Dry hopped just after high crousin at 1.017 SG (90 hours). Cold crashed at 2°C 51hours after dry hopping. Kegged 40.5 hours after dry hopping, or 25.5 hours after cold crashing.
Dry hopped using the trub container on the fermzilla, which was purged with CO2 prior to opening the butterfly valve. Also put approx. 6 psi into trub container before opening the valve to ensure hops were launched upward into the main fermzilla vessel.
Carbonated in the kegerator at 32psi for 36hours at 3°C, then lowered to 8psi serving pressure.
Cost was: grain $29.37, hops $12.49, yeast $4.99 total $46.85
This beer is smooth but has a spicy rye zip that to my palette is just right.
No further tweaks needed to this recipe. |

Notes: Tuesday 29th September.
Mash start 0830 with 4kg Gladfield Ale malt and 1kg Gladfield Redback Malt at 67C.
Start recirculating at 0925 with HLT temp at 72C. Finish temp 72C.
Start sparge ( water treated with 1 tsp Gypsum, 1/2 tsp Epsom ) and pump to Kettle at 10.10. Fire up gas at 1020 with 20L and collect 31L. Add 15gms Pacific Gem in spider at 1044. Boiling at 1046. Add 15gms Citra and 15gms Mosaic at 1210. Flame out at 1218. Start cooling 1220 Add 40gms Zythos at 80C. 60C at 1225, 44C at 1230, 30C at 1240, 20C at 1300.
22/23 Litres after boil.
Start runoff to MJ Fermenter at 1300 - collect 21L.
OG 1050/51 = 70% efficiency. Pitch yeast MJ36 Liberty bell at 1430.
Light bubbling at 2100. Fast start.
Wednesday 30th bubbling really well smell is good.
Thursday 1/10 at 1500 bubbling almost stopped - add 50gms Zythos as dry hop and give a bit of rotate back and forth to get pellets to hopefully drop and stimulate a bit of bubbling to purge o2.
Sunday 4/10 put into fridge at 5C.
Thursday 8/10 - after a few days at 5C and tasting and smelling slightly vinegary now absolutely delicious. Rack into Keg1 and collect 19L and 2 x 500ml bottles.
Gravity 1020??? Gravity if doesn't drop = 4.07% and goes up .26% for every 2 degree increment. 1018 = 4.33% 1016 = 4.59% 1014 = 4.86% 1012 = 5.12%. |
