Notes: 1. The 20L of water is pH adjusted to 5.0-5.4 using citric acid only. Avoid the addition of salts.
2. Heat water to 62 degrees Celsius and begin circulating water.
3. Crack grain and add malts to a BIAB bag. Tie back back and place into water. Monitor temperature and time for 90 minutes, adhering to the mash schedule.
4. Mash out after 90 minutes has elapsed at 78 degrees Celsius for 5 minutes.
5. Sparge with 5L of water at 78 degrees Celsius.
6. Boil mash to 90 degrees Celesius and follow the hop schedule.
7. After 15 minutes, add all adjuncts to the boil including sugars. Prepare the immersion chiller
8. When the boil has finished, turn off the heat and begin chilling the beer to around 30 degrees Celsius. The rest of the cooling will be completed in the fridge. Do not pitch until wort temperature has fallen below 10 degrees.
9. Pitch two packets of S23 German Lager yeast onto the wort. Seal the pressure fermenter and keep at 10 degrees Celsius for 14 days. Set the spunding valve to 15psi.
10. Dry hop at 14 days. Remove from fridge and finish finish fermentation at room temperature (18 degrees) for 4 weeks at 15psi. Pressurise after removing from fridge.
11. Filter beer and keg at 5 degrees at 5psi. |

| Notes: This will be a simple single malt mash to re-use dry-hop bags that I saved from the Cayman Cocktail and the Fast & Furious IPAs. They used different yeasts too. I've entered all of the hops and guessed at 2% utilization based on what we experienced last time. I could do them separate, but think this is easier with less equipment to clean. It's a maintenance brew after all. No extra yeast was pitched or needed. The residual Krausen left on the hop bags was sufficient. Next time I need to brew this sooner after previous brews as I think both hops and yeast were a bit muted. The end result is a slightly 'smooth lemonade' effect which is crushable by itself (especially at <3% ABV) but also tastes excellent with a shot of Maker's Mark in it. |

Curvas de temperatura de mostura:
Quando a água da mostura estava a 60ºC adicionei os maltes, e elevei a temperatura até 64º, temperatura em que repousei por 45 minutos. Em seguida subi de 64º pra 66ºC, descansando nesta por 35 minutos. De 66º subi pra 70º,e fiz o último repouso, agora de 40 minutos, após elevei até 78ºC e desliguei o fogo. Fiz a filtragem da mistura, lavei o bagaço, e levei, então, 63 litros de mosto para a fervura, que transcorreu vigorosamente por 80 minutos.
Ao final do resfriamento obtive 50 litros de mosto com 1056 de OG, os quais foram divididos em 3 baldes fermentadores, 2 deles com o S-23 e 1 com o W34-70.
Nos 7 primeiros dias de fermentação mantive a temperatura em 10ºC, e nos últimos 2 em 14ºC, totalizando 09 dias de fermentação. Em todos os três baldes obtive a mesma atenuação, finalizando com 1016 de FG, o que me deu 5,22% abv. Os primeiros 17 litros dela (degustados no curso do dia 17 e feitos com o S-23) maturei por 15 a 0º, enquanto o restante da leva maturou um pouco mais, por 23 dias, o que garantiu uma melhor clarificação (foto acima), sem, na minha opinião, alterações nos perfis de aroma e sabor.
