The 10ml Lactic Acid addition is added after the bash/boil to pre-acidify the wort. It probably isn't enough to get it down to the recommended 4.5 ph but I didn't want to over do it (I don't have a PH meter)
First time trying Brewtan
Mash and boil with NO hops
Cool to 35 degrees
Add Lacto
Wait until desired sourness is reached (check every 12 hours)
Add a little bit of sugar to bring it back to expected pre-boil OG
Boil again and add hops
Cool back down, pitch yeast and ferment as normal with yeast

| Notes: This wild Ontario ale yeast was isolated from an apple in a local orchard. Wild Thing produces distinct clove, spice, and subtle banana and apple fruit aroma. Notes: Snark Lord is quite a huge Imperial Stout! As a delicious,
complex beer, there are a few special instructions for making sure this one comes out as close to the commercial version as possible. One pound of a sugar (not included) is added at the last 10 minutes of the boil. We recommend
jagggery, a non-centrifugal cane sugar. Jaggery goes by a number of names and can often be found in Indian or Asian grocery stores. However, you might try turbinado sugar or molasses as a substitute. The two included
vanilla beans can be cut open, scraped and added to the boil, soaked in enough vodka to cover for a few weeks then the resulting tincture added into the secondary at bottling time, or both! The 4 oz of included coffee can be cold steeped in about a quart of water by coarsely crushing the coffee beans (a sandwich bag and a rolling pin or coffee cup work well for this), adding them to the quart of water, and refrigerating for up to 24 hours. You can then
strain out the coffee beans and add the cold steeped coffee to the secondary or in the bottling bucket/keg at packaging time |

Strike water at 165.1 with grains at 70 to achieve 152 content in mash.
Begin recirculating at 55 min in mash. Continue for 20 minutes. Then commence sparge.
NOTE: ADD CORN SUGAR WITH 5 MINUTES REMAINING IN BOIL
Final gravity should land in the 1.014-1.017 range. |

-American Brown Ale brewed with American malts and golden honey with a sharp bite from a carefully chosen selection of hops: MAGNUM for bittering and homegrown whole leaf CASCADE for a grapefruit flavor and aroma.
Yeast: Sept. 11, 2018 Lot#1061919 QC cell count: 2.77e9 cells/ml
Gypsum used to add sulfate "crispness" to the hop bitterness.
-Targeted Mash temperatures in the range of 152°F to 156°F to create a wort with a balance of fermentable and non-fermentable sugars.
-Re-circulate (vorlauf) until wort is fairly clear (15-20 minutes)
-Golden honey addition at flameout.
-All test equipment calibrated prior to use, samples temperature adjusted, FG measured with a precision hydrometer.
-BU:GU (Bitterness to starting gravity ratio): (IBU [34.07] divided by OG (62) = [.55]. (Note: 0.5 to 0.7 for a balanced amber brew).
