Notes: Heat the water to 122F and add wheat and pilsner malt. Rest for 20 minutes.
Heat water to 148F and rest for 60 minutes.
Heat to a boil (for 15 minutes total).
Cool wort to 95F and adjust ph down to 4.5.
Add half container of lactobacillus probiotic drink.
Allow to sit 24-48 hours (or until desired level of sourness is achieved).
Heat to a boil (for 60 minutes total).
Add Huell hops with 45 minutes left in the boil.
Add Huell hops, salt, coriander, lime, and white pepper with 10 minutes left in the boil.
Cool to 70 degrees and add yeast.
Ferment for 1 week.
Dice, blend, and pasteurize cucumber (170f).
Add cucumber to beer and allow to sit for 3 days.
Keg or bottle, carbonate, and drink! |

Notes: I basically stole this from the Maltose Falcons by combining two of their recipes (I invert the Candi Sugar myself from Aussie raw sugar.) They didn't like the Belle Saison Yeast, but I have heard good things about it when used at higher and varying temperatures - a technique that certainly worked on my previous Saison.
It will finish a little lower in SG and higher in ABV as BF doesn't understand the effects of large pitches and high temperatures - I also find that I tend to undershoot my mash temp which adds to conversion and less body.

| Notes: This was the first beer my brother and I made. We decided to call it hornet because one flew into it while we were boiling, we were outside. It was great, but it didn't get as dry as I hoped. I think the warrior hops complemented all the coffee flavor well. In fact it seemed like strong fermented coffee. I was unsure how much chocolate flavor it would have from the chocolate malt, hardly any, just hints. Which was perfect. We gave quite a bit away, everyone who tried it said they liked it. Oh and the ec-1118 I used that to try and get it completely dry, it may have had I left it sit longer. If you like strong stout and strong coffee, you will like this. The roasted barley was not malted, and the 9.9# lme was Bries's Porter extract. |
