Notes: Description: Going for a nice, smooth, thick, kinda-chocolate'y oatmeal stout with a flavor of biscuit'y bread and oats.

- With 1lb of rice hulls, the mash went very smoothly. In fact, next time I'm going to bump the 2lbs of oats to 3lbs to try and push that limit a bit.
- 1lb of victory is a shot in the dark. Not sure how this will play with the .5lb of roasted barley. 1lb feels like a lot, so if it's still overpowered by the roasted barley, maybe swap the roasted barley for crafa (something that will add color, but not a whole lot of toasted notes). Also, remember that the dark chocolate might do some lifting on the roasted side.
- If it's too thick and syrup'y, drop the C80 a bit.
- This batch, match temp was perfect. No issues. Sparge was done in ~45min. I did use a starter.
- OG: 1.076 w/ 6 gallon yield. Yikes. Recipe says 1.069 @ 5.5gal.

Notes: kettle sour, boil, then whirlpool w/ 3 oz of your choice of hops (I used Mosaic, Cascade, and Amarillo most recently) making sure not to go over 17 ibus or so ferment out w/ clean yeast of your choice (I always use wy1098 for my kettle sours) dry hop w/ 3 oz hops for 4 days.

Notes: Brew Date 7/1/17:
Collect 1L of wort for a lacto starter - pitch 5 pills of lacto p into starter and spin on stir plate for 24 hours.
Pitch slurry of 1318 from a previous pale ale to begin fermentation. After 24 hours pitch lacto starter.
After fermentation rack onto strawberry and lime puree. Goal is to make a low abv "strawberry margarita"
The beer didn't get very tart, possibly from residual hops in the 1318. Blended in ~2g of tart berliner weisse on 7/13/17.
Added about 6# of pureed pasteurized strawberry on 7/12/17.
Added the juice of 4 limes plus the skins of 2 of them.
Added a Tbsp or so of Pink Himalayan Sea Salt dissolved in with the strawberry puree as well. |
