Notes: Previously called the "Friends of Jenn" series, this is a quest to dial in my perfect IPA. The base has remained the same. The variables that have been changed are: water chemistry, hop times/quantities/breed, and yeast.
For this version I adjusted the hops to a small bittering addition at 60 minutes then a massive 5 day dry hop. I also decided to go with a mix of my favorite mosaic and citra along with el dorado to bring in some pear or stone fruit to the sharp citrus of citra and the cornucopia of flavors that come from mosaic. Previous editions have been good, but lack the aroma I've been looking for. For water, I switched to purchasing water from Publix using the machine and my own vessels and have been treating it as though it is RO. The sulfate to chloride ratio remains a 3:1. |

- 5 Gallon Homebrew Recipe
- Crack open a Pale Ale! Mash grains at 155 °F for 60 minutes.
- Raise mash temperature to 170 °F, hold for 5 minutes, then recirculate.
- Run off wort and sparge with water hot enough to keep the grain bed around 170 °F.
- Boil time is 90 minutes.
- Follow hopping schedule below.
- Cool wort to 68 °F and pitch with California ale yeast, AKA Chico ale yeast.
Open another Pale Ale, and wait until ending gravity is 2.8 °Plato (1.011 sg)

Notes: Original recipe earned a Silver Certificate at the 2016 National Homebrewing Competition (37 points, one short

Notes: Partial mash Recipe.
Steep grains in 1.7 gallons of water for 60 min at 150. Start at 163.
Sparge grains into brew pot with 1 gallon of 150 water.
Bring pot to 3.5 gallons and bring to boil
Take off heat, add sugars.
Bring to a boil and add challenger hops. boil 60 min.
15 min, add 1 oz nugget and irish moss.
10 min 1 oz chinook
2 min 1 0z nugget
Take off heat and immediately chill with wort chiller
strain beer into primary fermentation and bring level to 5.25 gallons.
Pitch yeast at 68 degrees. Let sit in primary fermentor at 67 degrees for 1 week.
Transfer to secondary fermentor for 7 days and then add dry hop of 1 oz chinook.
Let sit 7 more days.
Mix priming sugar (5.8 oz DME) with 2 cups of water boiled for 10 minutes.
Bottle. Enjoy
