1600ml final volume Starter. 12hr (minimum) before brew day. Refrigerate over night. Pull out at start of brew day and decant to 400ml. Allow starter to warm up during the brew day. Should be at 68-70F at Pitch time. Rock bucket or Carboy for 5min to air rate.

Notes: This is a specialty brew because this brew requires a different step for an IPA that will give this beer a much deeper color. I selected "Belgian Biscuit" above because it is close to the Lovibond (23) and "toasted malt" is not in the drop down menu. You are actually going to roast your own English Pale 2-Row at 350 degrees F for 10-15 minutes, and that isn't in the drop down menu, but will give you 25 Lovibond. Let it cool, then roll a thick glass over the grains to crack the hulls. It can now be steeped.
Ferment for 7 days, transfer to secondary and leave until fermentation stops. Add Gelatin (optional) 3 days before bottling and cold crash in fridge to clear up the beer. Bottle, age 21 days, chill 3 days, enjoy!!

Notes: I got this recipe from a few different sources, the main one was a recipe from a brewclub that were shown by Bill Covaleski a brewer for Victory how to make Prima. For awhile there was a shot online of the ingredient sheet, that wasnt supposed to circulate, the link to the recipe is below. Also I used replacement hops for Sladek, I got those from other clone recipes and the Victory website. Some people recommended doing a decoction mash, but I read conflicting reports on Victory's use of this technique, mash scheule below

Technically the hops are supposed to be whole leaf, but good luck finding whole leaf saaz and hallertaur hops around Humbodlt. The original recipe called for Sladek hops but I cant source these. So the subtitution is more saaz and hallertauer
Dough in @ 122 F (4.1 gallon watter assuming 1.2 qts/lb)
Protein Rest 20 min (pH should be 5.2-5.3)
Increase mash temp to 149 F (add 6.08 gallons at 210)
Sacc Rest 60 min
Recirculation through 155 degree water.
Sparge at 170 F until 7.5 - 8 gal
Boil 90 min (add hops per schedule)
Chill to 60 Degrees
Ferment at 50-55 degreees
Lager for 4 weeks 34-38 Degrees F |
