An empty container of LME weighs 1.34 oz.
Started fermenting a few hours after pitching. Rehydration must've been spot on. Glass carboy is in the corner of the living room with two wet t-shirts covering it.
Bottling day: 04/29. 1.5 oz of corn sugar with 1 cup boiling water. Makes 1.7 volumes.
Last bottle: 07/22. Taste test with Newcastle.
Appearance: Commercial is much clearer and much lighter. To be expected. My head is larger at first but dissipates quickly. Looks like similar levels of carbonation based on bubbles. Mine is an opaque brown, almost black. Newcastle is a nice copper red. Newcastle wins out here.
Aroma: Mine is nutty and caramelly, but only slightly so. Probably smelled stronger with fresher bottles. Medium notes of bread. Newcastle aroma is much harder to detect. Slightly nutty not much else.
Taste: Mine is rather carbonated upon entry. Newcastle's is immediately smoother. Not necessarily a better thing. Mine has caramel and roasted attributes. Newcastle's finish is more "boozy", mine is slightly more bitter, less boozy.
Mouthfeel: Mine has a fuller body, Newcastle is thin by comparison. Hard to find any other differences. Both dont leave a terribly strong after taste. Both are pleasant.
Overall: Maybe biased, but I prefer mine. The fuller body lends itself to a fuller, more robust taste. If I made it again, maybe I'll try upping the chocolate and/or black malt in order to bring out more flavours. |

Notes: Starter:
.5 gal water and 1 cup Light DME. Pitch lactobacillus to starter wort at 100 Deg F. and hold temp for 3 days.
Day 3: Brew day
Mash grains for 15 minutes at 130, then step up to 155 for 60 minutes. mash out at 168 F, collect runoff and Boil for 15 minutes. Reduce wort temp to 100 deg F
Adjust Wort pH to 4.5 before Pitching Lacto starter and hold at 100 Deg F for 7 days, or until pH reaches 3.3-3.7.
Day 10: Boil and Pitch yeast.
Boil soured wort for 90 minutes, and chill to 56 Deg F.
Pitch German ale/Kölsch yeast and ferment for 6 days at 56 Deg F.
Day 16:
Rack to secondary, and add the fruit of choice.
Optional: gather up a small amount of yeast from bottom of primary to pitch into secondary along with fruit addition. Allow to rest for 10-14 days.
Day 26:
Drop temp to 39 Deg F and condition for 1 week.
Day 33:
Keg and Carbonate to 3 Volumes Co2. (6 g/L) and serve.

Notes: A starter lambic for me, I didn't have aged hops or existing culture.
Will throw in dregs from a Cuvee Rene and a Tilquin Oude Gueze a L'ancienne.
4/18/2016. grav: 1.018. smell is kind of sulfurous, mildly reminds me of rotten eggs. taste is moderately sour, flavored like a lemon. might do well with some kind of citrusy dry hopping.
9/10/2016. grav : 1.016, smells kind of musty, with a tad of funk. not as sour as other 2 beers, taste has some funk and a straight forward mild acidity, no longer picking up much lemon.
12/22/2016: grav: 1.015, very buttery, kinda sour. no sulfur. |

Notes: Reserve half the lactose for the secondary and add to taste after coffee (carb a bottle to test)
Add the whole coffee beans to the secondary in a bag and sample daily and remove when coffee is sufficient.
Coffee roast profile can change the flavour significantly. So experiment :) |
