Notes: Use a decoction mash schedule with an initial rest at 147°F (64°C) for 90 minutes. Pull 15 quarts thick mash, with five minute rests at 148°F (64°C) and 158°F (70°C). Boil thick mash for 10 minutes and remix to achieve mashout at 170°F (77°C).
Primary fermentation for 18 days at 52°F (11°C). After 4 days of fermentation, add the dry hop addition. After 18 days total, slowly raise the temperature to 60°F (16°C) for 3 days for a diacetyl rest. Once at final gravity (approximately 21 days total), bottle or keg the beer and carbonate. If bottling, keep at 52°F for 2-weeks minimum prior to lagering.
Lager at 34°F (1°C) for approximately 1 month before serving. |

Notes: I made this recipe. I had leftover wheat malt and Briess Chocolate Malt leftover from Brew and Grow that was vacuum sealed. I am going to use my homegrown hops. Regarding my hops and IBUs. According to Brewer's Friend, Tettnanger are 4.5% aa and Cascade are 7% aa. I adjusted it down to 6% aa for the Cascade. I decided to boil the cocoa nibs rather than adding during fermentation. Yeast was purchased for batch 94 and also used for batch 95 and 97. This was only farmed once for batch 94 and never harvested after brewing. My recipe with just the LME showed 3.6% ABV, so I added 3 pounds of wheat DME to increase it to 5.67%. I forgot to add the cocoa nibs at the beginning of the boil as the old recipe didn't have a time. Added them at 30 minutes. |

J-Lo & Chew-zacca’s Wild Ride Pale Ale

Shared from the homebrewers in the test brewery at BSG HandCraft (headquartered in Shakopee, Minnesota), this pale ale combines both Azacca® and Jarrylo™ hops to create a drinkable homebrew with lots of grapefruit, pineapple, spice, and herbal notes. If you like this recipe, it might be a good candidate for adding grapefruit or another fruit flavor to further accentuate the hop characteristics.
INGREDIENTS
9.5 lbs. (4.3 kg) Rahr Standard 2-row malt
8 oz. (227 g) Weyermann Carahell® malt (10 °L)
8.2 AAU Jarrylo™ pellet hops (45 min.)
(0.5 oz./14 g at 16.3% alpha acids)
8.2 AAU Jarrylo™ pellet hops (5 min.)
(0.5 oz./14 g at 16.3% alpha acids)
2 oz. (57 g) Azacca® pellet hops (dry hop)
1 oz. (28 g) Jarrylo™ pellet hops (dry hop)
Fermentis Safale US-05 or Danstar BRY-97 (American West Coast) yeast
¾ cup corn sugar (if priming)
STEP BY STEP
Mash grains around 151–154 °F (66-68 °C) for 60 minutes. Sparge with enough water to collect about 6 gallons (23 L) of wort in the kettle. Boil for a total of 60 minutes, following hop additions as noted in the ingredients list. Follow the fermentation schedule given by the chosen yeast company for the strain you choose. After primary fermentation is complete, add the dry hops and let the beer sit on the hops for five days. You may want to cold-crash the beer prior to priming and packaging to 35 °F (2 °C) for 48 hours to improve the clarity. |
