the hop spider fell in so all hop additions are also kinda hopstand additions too- hopefully it isn't bad lol

Nice soft smoke and mouth feel. Dry but not thin. Smoke very much in background.
I changed the style category as the smoke pretty much fades into the background and is not the dominant ingredient.
I also split the batch and refermented with Brett B. The smoke is barely detectable.

| Notes: 1st batch: OG was higher than expected at 1.063. After 3 weeks in fermentor, finished sweeter than planned at 1.021, 10 points higher than the recipe. May need to pitch a second yeast on next batch, or with to Belle Saison or Wyeast 3711. Sweetness evident in first tasting after 1 week in the bottle. Gravity from the bottle at 1.023. Definitely needs more time to finish, but overall taste is outstanding. |
