Fermenting at 75 degrees, checking in with Tilt Hydrometer to wait for yeast to be active on the alcohol making side. 1st few days with Philly Sour should be mainly Lactic Acid production. Then will add pureed mango to a hop sock and leave in ferment for 5 to 7 days. Will be bottle condition post 1st fermentation.

Love this beer, great balance of dark chocolate flavours, hint of roasted coffee and hop punch. Super smooth and dangerously drinkable.

26/4/21 - SG: 1003 (Tilt) (WTF?) This has gone crazy low, maybe the Tilt has gone wrong. Cold crashed to 10 C.
28/4/21 - Dry hopped in single batch 75g Amarillo CRYO and 50g Citra CRYO
1/5/21 - Cold crashed to 1C.
2/5/21 - Kegged and carbed.
9/5/21 - Tastes great, lots of hop fruit and a smooth chocolate finish, very well liked.
21/5/21 - Not much coffee aroma, hops up front and nice smooth bitter coffee finish, this is a very good beer.
Substitutions
Veloria Malt (Schooner) (Voyager) 3.8kg and Gladfield American Ale 1.2kg swapped in for Maris otter 4.5kg to try and dial back biscuit flavours.
- Gladfield Munich 450 in for 454g Munich.
- Gladfield Eclipse 450g in for 454g Carafa III. |

Notes: Spread the Libbey's Canned Pumpkin evenly onto a cookie sheet. Sprinkle with brown sugar (about 1/2 to 3/4 cup) of brown sugar and dust with pumpkin pie spices. Roast in oven at 375 for an hour to Caramelize and and cool before putting into mash (or it may throw mash temps).
I'm going to use a pound of rice hulls to see if it'll help with re circulation. |
