Notes: 25l Mash at 67•c 60 min, sparge upto 28l pre boil.
60min boil, 30min hop additions.
Chill wort to 17•c and Add cold brewed coffee then transfer to fermenter and pitch yeast at 17•c and take it up a degree each day till reaching 21•c to limit diacetyl production.
Let fermentation finish and sit for a day or so then keg or bottle.

Notes: This Pale Ale recipe utilizes Falconer's Flight and Cascade hops. It is modified for a stovetop that can only boil 4.5 gallons of wort, assuming a 2 gallon top off after the boil.
The hop's are increased 20% to compensate for the non-full boil volume and to optimize purchasing and using complete 1 oz packages of the pellet hops.
The optional German Acidulated malt helps lower the mash PH for a high PH water profile. This can be left out in most cases. |
