| Notes: Brewed it 1/1/2020. No idea where the high efficiency came from as I am normally around 62%. Was planned for a 1.5 gallon batch but had to dilute to 2.45 gallons to bring down gravity. Mashed out at 148º. 1.012 1/4. Cold crashed (40º 2 days) Bottled 1.93 gallons 1/7/2020 aimed for 2.6 volumes. |

Notes: Kit recipe called for 2 lb of DME — I only used 1 lb. I also increased the batch size to 6 gallons to hit desired (lower) ABV.
Yeast starter — Initially thought I was going to brew this in mid-February, so I made this 500ml starter on 2/8/19. Realized on 2/10/19 that I would not be brewing that weekend, so I put it in the fridge. Pulled it back out on 3/26 and pitched it into another 500ml of starter wort. Cold crashed morning of 3/2/19. Decanted morning of 3/3/19 and allowed to sit at room temp for several hours before pitching into 6 gallons of wort.
Secondary fermentation — 3 gallons will stay in 6 gallon fermenter. 1.5 gallons will go into 3 gallon carboy with (INSERT AMOUNT) boiled kumquat puree. 1.5 gallons will go into 3 gallon carboy with (INSERT AMOUNT) boiled kumquat puree and (INSERT AMOUNT) szechuan peppercorns. |

Notes: A perfect 10 gallons topping off both kegs... Maybe a touch too much beer actually.
Flavor is a little off. Don't use German ale yeast again... Malty flavor is there but the yeast gave it a funky "German ale" flavor. Bad yeast choice...
Beer was well recieved at Oktoberfest, however maybe try as a standard Vienna with an American Ale Yeast. |

Add 3 mL Hop Shots at 60 min.
Ferment at 60 F for 7-10 days, and once fermentation slows raise temps to 68 F for 3 days. Cold condition in the keg until the beer clears (don't bottle until then).
Used 1.5 lb of Orange Blossum honey in the fermentor when pouring in wort.
