Notes: Bring 6lbs of frozen strawberries with pectin added to a boil.
Pectin is added to prevent chill haze.
Shutdown boil after 1 minute.
Cool pot rapidly to room temperature..
Add equal volume of water and honey.
Cooked honey at 160 Degrees for 30 Minutes. Cool pot rapidly.
combine strawberries, homogenized honey, and other ingredients. Sprinkled yeast on top of fermentables.
Add Fermaid K after 3 days to boost fermentation.
Rack to secondary fermenter after 5 Days.
Continue with fermentation until it ceases.
Verify final gravity with hygrometer.
Opti-White added for mouthfeel and protein stability.
FT Blanc Soft is a white wine tannin. Protects against oxidation.
Use both of these in meads and ciders.

Notes: An early ( for me) example of trying to create a complex cellaring beer, using a Sasion style was obviously not the way to go.
I have sampled this after 6 years sitting in my safe room {beer wise} 12 large bottles found and a possible extra 5litre demijon
There is a medium dry tone to this with good levels of complex light fruit flavour and no undue off flavours like wet cardboard or horse blanket etc.
Sour is mild and pleasant and carbonation is quite low and produces no head. I suspect there was not much for the Brett to work on so little effect.
I think the extended family will be required to consume the remainder this Easter.
6 years of cellaring is a bit long for this , I would hope to be able to get a beer like this with a couple of months in the cellar or less. |

Estimate 3l evaporation (in the end at least 5) over the hour so 18l boil vol
9.5l run off means 11.5 l sparge water
Strike water 72.7oC
Mash came to 62, where used calc in BF to aim for 65 ending with requirement of 71 strike. For future, add 4-5oC for a 15 l mash. Added 1.5l boiling water.
Mash finished at 62 after starting 65.6, 75 mins
Much higher efficiency than expected, 70% based on wort vol and gravity of 1.038. Had to up batch vol here!
No mash out on this one, just sparse at 78oC water. Could have increased this, didn’t monitor runnings T
After checking gravity of wort, found very high, so did another batch sparse to recover another 4l or so from the grain - still coming out at 1.025 but overall gravity of wort now at 1.038 so stopped, worried about astringency too (no taste of it in final runnings though)
Had to revert to dry yeast after starter too slow (start earlier than 2 days for recovered yeast!). 1 pack of US-05, added dry to wort. Going well when checked inside bucket 16hours after.
Very happy so far with brew, disappointed on yeast prep unrelated to this recipe now. Original recipe states Wyeast 1065. I had planned to use WLP001 recovered, but starter not ready in time. Replacement dry US05 - happy with fermentation progress morning after
Tested after 10 days, appeared not to be finished. After 16 - done. Add hops for 6 days then bottled.

Notes: Steep grains in 1.5 gallons of water at 155ºF for 45 minutes. Rinse grains and remove.
Add 1 gallon of water plus the 1/2 dry malt extracts and bring to a boil.
While boiling, add the hops per the hopping schedule.
Add Irish moss after 45 minutes of boiling.
In another pot add 1/2 DME to 1/2 gal water then bring to boil add to wort boil at 45 minutes
Add toasted coconut (see below for prep) after 55 minutes of boiling. (5 min before flame out)
Cool the wort to 75ºF and add to two gallons of cold water in primary fermenter and top off with cold water to make five gallons.
Pitch yeast and aerate well. Ferment in primary for 5 days.
Rack to secondary and add toasted coconut (see below for prep) and cocoa nibs. Ferment for an additional 8 days.
Rack to bottling bucket and add almond extract and priming mixture. Bottle and condition in bottle for at least two weeks.
Toasted Coconut:
Spread .5 lbs of unsweetened coconut on to a large baking sheet and bake for 5-10 minutes at 325 degrees turning the coconut a few time. Sanitized with vodka for at least 15 minutes before adding to primary or secondary. I have used Stolichnaya chocolate coconut vodka for this recipe. |

Notes: Steep Bob's Red Mill Mighty Tasty Hot Cereal at 150 - 160 degrees in 1.5 gal water for 30 minutes.
Bring water to boil, and add all primary ferment-able sugars, return to boil and achieve hot break.
Add hops, finings and other ingredients according to schedule.
Chill wort until appropriate temperature approximately 68 degrees, to pitch yeast.
Dry hop after racking to secondary.
