Notes: Add Hops, chocolate, and coffee as specified. Ferment for 2 weeks at 65F.
Soak ground kona coffee in 1 cup boiled, cooled water and leave overnight, covered in refrigerator.
Strain out grounds and add cold coffee to secondary. Rack fermented stout into this mixture and condition in secondary at 55-60F for 2-6 mos. |

Notes: As you may have noticed, these days haze is all the craze in the IPA world. After many, many test batches we are
proud to present our version of this juicy style - Fruit Bazooka NE IPA. Only mildly bitter, the hop charges in this recipe
create a blast of in-your-face flavors ranging from ripe mango, orchard fruits, melon, lime and passion fruit to subtle
pine and floral notes. Fruit Bazooka is perfectly hazy thanks to the use of flaked oats, wheat malt, massive dry hopping
and a relatively non-flocculant yeast strain. The name itself was suggested by a homebrewer who witnessed
our first tasting notes, and as it implies, this beer is bursting with an intense payload of citrus and tropical fruitiness. |

Notes: Christmas Pyre Ale
Bed of Douglas Fir Branches on the bottom of the mash tun. Sacch rest at 152F for 60 min. The rice hulls will also provide the structure for the bed that you need to get the goodness washed into the kettle. Boil. Honey goes in with 5 minutes remaining along with the hops. Kill the flame, add the Fir needles (2 cups volumetrically), swirl and cover for 60 minutes. Chill rapidly, aerate, pitch and set to 66F for the first two days and then raise in 2 degree increments over the next two and set for a total of 14 to 17 days. Cold crash for 2 days to 37F, rack and and then bring back to 70F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 70F. |
