Notes: Malts: Weyermann Floor Malted Bohemian Pilsner Weyermann Floor Malted Bohemian Wheat, Weyermann Light wheat or CHÂTEAU WHEAT BLANC Flaked Oats Weyermann Acidualted Malt
Brewing notes: - Added 200 gr flaked wheat before sparge. Brought to boil, then cooled to 35C. 1.053 OG (about 46L split between two plastic carboys) Adjusted the PH to 4.5 with 80% lactic acid. (about 1,5 tbs in each carboy for me) Added content of 6 capsules of Probi Mage L. Plantarum to each carboy. (60 bill cells)
2 days later: Pitched 3 packages of rehydrated Belle saison, 1 ts yeast nutrient and the rest of a starter with TYB Lochristi and Brussels brett blend I had going, between the two carboys.
6 weeks later: Racked over sliced, red bell peppers in a glass carboy. (450 gr/l) Takes about 45 red bell peppers for 20 liters of beer. Important to choose the bell peppers with a dark red color. They are supposed to be juicy and crispy, not soft and flabby. Those are flavorless compared to the juicy and ripe ones. Rinsed, removed the seeds and the white before slicing up and adding them to the carboy.
4 months later: Bottled with 6,5 gr table sugar per liter. (1.004 FG)
Would probably let the saison yeast and brett rock out a bit next time, making precursors before souring with a starter of L.Plantarum. This batch aint that old yet, but I would love some more yeast and brett character in these type of brews. |

Notes: On day 3, got really crazy, and added 150gr. dark belgian candy sugar, 1 cinnamon stick, 30 oak cubes, 1 clove pc, to 1 cup of water, boiled down to a semi-thick base. Added to fermenter which upped the SG - +0.003. Yeast chewed thru this new sugar edition like crazy.
Allowing temp to slowly raise from 68 deg. F to 73 deg. F. over the first 3 days of fermentation, once FG was reached, raised from 73 deg. F to 76 deg. F....rest at 76 for 3 days.
Move to secondary fermenter on day 7, taste test was wonderful, very smooth, and flavorful.
Note: at end of boil, created a mixture of Jim Beam 5-yr Bourbon (2 oz), Triple Sec (1 oz), 2 drops vanilla extract, and 1 drop of almond extract. Added 3 oz of zested Mandarin Oranges, 3 clove and 1 cinnamon stick (ground). This mixture was strained two days later, and will be kept cold until adding to brew at bottle day.

Notes: Made a starter using wort diluted down to approx 1.040 with weak sugar water. Total volume of starter: approx 1L
Note- was uncomfortable putting all of the wort into the 30L fermenter, so only used 26L + most of starter. Pitched Tuesday Jan 12.
Measured OG: 1.058
Made happy bubbles for a few days, then glug-glugs for a few more. Temperature was initial a bit high, maximized around 23-24 C, put ice packs on the fermenter, managed to get it down to 20Stuck the dry hops in around Sunday Jan 12.
Got all geared up to bottle with Fanch on Saturday - put in priming sugar, then took FG (oops). FG was 1.026-1.028? What? The green beer tastes sweet - as expected given the gravity.
So... we bottled anyway. What a mistake. Ended up with all bottle bombs - except perhaps one, which I let ferment separately in the starter fermenter.
After discussion with Mark H., I decided to crack the bottles carefully (see videos) and put them back in a fermenter. To kick start this, I made a starter with one of the bottles and some sugar, aiming for around 1.030. After letting that go for two days, I put it and most of the bottles (what I didn't lose to foam on opening) into the fermenter (about 9-10 L total volume). The measured gravity at that point was 1.022. The airlock started gurgling right away so I guess that's good. |
