Recipe is for 70% brewhouse efficiency. Standard infusion mash at 152 for 60 minutes and batch sparge.
Adjunct addition notes :
* Lactose can be added at flameout
* For the mango, plan to add after high krausen. I buy frozen mango chunks, thaw at room temperature, then blend into puree.
* vanilla bean should be prepared in a tincture : split and scrape the bean(s), add to a small glass and top with very small amount of vodka (enough to cover the scraped bean and filling)
* add the vanilla bean tincure and coconut with the dry hops - usually put them all together in a muslin bag
* once fermentation is complete i usually cold crash for 24 hours then package. |

-Starting mash temp = 152 degrees
-Stirred the mash every 15 minutes to increase efficiency
-Mash in pH range of 5 according to pH paper
-Final mash temp =151 degrees
-OG = 1.073
-Didn't boil off to 4 gallons. Around 4.5 gallons. Probably made some of the gravity difference.
-Noticeable fermentation did not start for 48 hours.
-Vigorous fermentation at 67 hours.
Gravity on 8/7/20 = 1.020 (7% ABV)
Pronounced dark caramel and raisin notes, notes of brown sugar, slight alcohol warmth.
FG on 8/25/20 = 1.021 after temp correction
ABV = 6.83%

Notes: Style Guide/Justification of ingredients: 22A: Double IPA
This recipe meets the style guidelines. SRM is on the low end, but very close and the grain bill is simple and very effective not necessitating an adjustment. FG is a tad high but final fermentation numbers will be within style given the grain bill (table below). The hop varieties and schedule should lend to an intense hop aroma featuring prominent grapefruit, pine, orange, pineapple, passionfruit, papaya, melon, and citrus notes as well as earthy undertones associated with the style. The malts should all contribute to the overall golden-orange color of the style. The malts should produce low aroma, as well as clean flavor associated with the style. Pale malt should contribute well to body and mouthfeel as well as low levels malty, sweet, and bready, biscuit notes. Vienna should contribute low levels of bready and malty, sweet flavors. Flaked oats should contribute to a smooth mouth feel as well as head retention. The yeast is ideal for clean flavors with good attenuation in higher gravity beers as well as accentuating hop flavors and aromas. Hop flavor should be complex, layered, and strong with a balanced blend of dank, resinous and citrus, featuring tropical character. Bitterness should be long and lingering (without harshness) characteristic of the style. The body should be medium-light with smooth texture characteristic of the style, and gypsum should aide in attenuation and accentuation of the hoppy character. It should finish medium-dry, and clean.

Notes: * Built up a 500 mL starter from dregs of Fantome Forest Ghost Blonde.
* Roast 1 kg (a little bit more than 1 kg to accommodate for evaporation) at 350 F in the oven for 30 minutes. Flip and roast 15 minutes longer. Cool, add 1 g pectin enzyme, puree, and freeze.
* In 4.5 L water, add minerals, orange peel, and DME (cane sugar in recipe is estimate from persimmons). Boil until 4 L remains, add cinnamon sticks, roughly smashed spices, fresh ginger, orange zest, and yeast nutrient.
* Chill to 64 F and pitch starter. Ferment at 66 F for three days and raise to between 75 F and 80 F for two weeks. Add persimmons after first 7 days.
* Rack to secondary at 70 F for clarification for at least one week.
* Cold crash for 1 day. Add gelatin, cold crash three days. Keg/bottle at 3 vol CO2. |

Notes: DIPA version of furnado, a late hopped pale ale. Using dry yeast for this one as I have 3 packs of (expired) US05. Should still be fine though as it has been refrigerated the whole time.
