Chill wort to 63-64F
Oxygenate chilled wort to 8-10PPM by diffusing pure O2 via .05 micron diffuser for 90-120 seconds.
Pitch decanted yeast starter, adding chilled wort to the yeast flask to clear remaining yeast as necessary.
Ramp fermentation temp (evenly over time) from 63 - 80F over 7 days.

Clear wort boil-down notes (Optional Step):

(Optionally) perform a separate boil-down of 1.00 gallon of vorlaufed wort into a syrup using the following steps:
1. Extract 1.0 gallon of wort at the beginning of clear runoff into a 3-5 gallon pot.
2. Boil the wort down until it becomes a dark mahogany brown and is bubbling with large bubbles.
3. Be careful NOT to burn the maltose syrup.
4. The result will be approximately 24-26 ounces of syrup.
5. Re-crash the syrup by adding wort from the ongoing main boil.
6. Pour the dissolved liquid back in to the main boil.

Notes: # Morse
This is beer uses the British hop Endeavour. It's named after TV detective, Inspector Endeavour Morse, who really liked his English Best Bitters.
This uses ESB yeast which has a high flocculation rate, it's best to pitch a well grown starter.
## Tasting notes
Dark ruby red in colour with a white head on pouring. White lacing stays around edge of glass while drinking. From the aroma I get quite a lot of fruity esters from the ESB yeast and some roasty malts. On tasting, there is a lot of roast flavour for a bitter, this is probably pushing the limit for the style. Also, a lot of fruity, maybe red berry flavours. Medium bitterness and a little caramel sweetness. Great beer and flavorful but that makes it a little less drinkable which is not to style. One of my favourite recipes. |

Notes: I was just doing an experiment with the yeast. I'll post how that combination turned out after the fact.
This beer turned out amazing in terms of it's taste. It had much more of a dunkelweizen taste rather than a hefeweizen flavour, however, it was much darker and heavier than I would have liked. I reccomend either completely removing the caramunich, or significantly decreasing the amount. I think in the future, I am going to increase the caramunich amount and turn this recipe into a dunkelweizen. |

Notes: We're repeating a pale ale we brewed for a BrewDog competion, where the rules stated you could only use pale malt. This time we will introducing some specialty malts for head retention and body.
Again, we'll be using high volumes of low AA British hops to balance out the high AA US hops. Plan is for the ABV will go down from 5.64% to 4.5-5% and the IBU will remain between 70-80.
It should have some floral/earthy notes and we do not want it too citrusy. We hope the honey flavour from the Golding and Progress add some sweetness alongside the orange from the Amarillo.
In keeping with the naming of the Paladin Pale Ale series we'll dry hopping will occur with different choices per fermenter.
We'll remake the "Tropical Paladin" using Amarillo and the Citra Pure Hop Aroma Oil.
We may get to try a "Water Paladin" using the Cascade Pure Hop Aroma Oil. |
