Notes: 4 liter starter. Decant the day of brewing and make a 1 Liter starter just to wake the yeast up and dump it all into the fermenter.
Let it sit on the yeast cake for about three weeks before cold crashing for 5 days with gelatin.
Transfer to secondary after the cold crash and add whiskey soaked barrel chips or #3 char oak spirals.
Give it a taste after a couple of weeks and if it's good proceed to bottling with a pinch of CBC yeast in each bottle. Do not try to add the yeast into the bottling bucket, it does not typically make it into the bottles when you do that. |

Notes: Notes: no yeast starter - one fresh pack of imperial. Hops weren’t vacuum sealed (resealed)
Tasting 2 weeks after kegging (vacation). Clean, dry pale ale. Malt is nice and subtle. Hope nose and aroma isn’t as strong as I would have hoped with the amount of hops used.
Tweaks: will potentially up the Amarillo whirlpool and up the first dry hop charge. Also probably add a piney/dank (Simcoe) hop to add depth to the citrus. |

Ferment for about 10-14 days until primary fermentation just finishes.
Diacetyl Rest: Raise beer temp to 62-65F for 2-3 days.
Rack to keg or secondary and start cold-aging process. If possible taper temperature down 5-7 degrees per day from Diacetyl rest to 35F. Cold age at 35F for 5-6 weeks. Add dry hops for last 10 days. |
