Notes: Aiming for a tart, funky, dark Saison - a mix of a dark Saison and an Oud Bruin. Mash high for more long-chain sugars for the bugs to chew on over time. Any type hops for bitterness only, about 10ish IBU (don’t want hops to inhibit pH drop too much, or bitterness to clash with tartness).
Cut dried figs in half, boil in wort (enough to cover - about 2 cups) for 15 min, deglaze if needed, and then blend with stick blender. Add in last 5-10 minutes of the boil.
Due to equipment limitations, I’m doing a partial boil and then adding RO water to get up to full volume into fermentor; do full volume boil if possible. I start with 5.56 gallons, using BIAB no sparge. Lose 0.66 gal to grain absorption, so 4.9 gal preboil. Lose 1 gal during 60 min boil, so 3.9 gal postboil. Lose 0.6 gal to kettle dead space, so 3.3 gal into fermentor. Top up with 2 gal RO water, so 5.3 gal total in fermentor. Lose about 0.3 gal to trub, so want as close to 5.0 gallons to rack into secondary fermentor (5 gal BB carboy for me), to reduce headspace and therefore O2 exposure over the long secondary.
Initially ferment with the sacc (a mix of Belgian and French saison yeasts) in primary, then rack to secondary and add house sour culture and/or bottle dregs (with lacto, Brett, and pedio - I listed WLP655 as an example, if you don’t have your own sour culture. Also add some Goodbelly - L. Plantaram - to sour), along with oak cubes (boil first to sanitize and reduce strongest flavors - only want as background note - then soak in red wine, port, dark rum, etc). Let sit for 3-12 months before tasting, and package when you like the flavor. I plan to bottle half as is, and rack the other half into a 3 gallon fermentor on top of raspberries and/or blackberries, and cacao nibs. |

Notes: 1. Add the honey to the sanitised fermenter.
2. Add warm water (about 30C) to the fermenter and mix.
3. Pour the coriander seeds and yeast nutrients into a container and add almost boiling water (80C) to sterilise, dissolve and extract flavour. Add to fermenter.
4. Add orange juice to fermenter.
5. Add mead yeast and mix again.
6. Store in warm room (mine is 25-30C consistently).
7. Add a campden tablet to halt fermentation at appropriate sweetness. (I went for 1.015 as I didn't want it too dry - leaving an abv of 5%)
8. Age 2 months before bottling for low-medium carbonation or no carbonation if you wish as is traditional. |

Notes: Made it one time with Citra and Galaxy in the Hopstand, and Vic Secret and Idaho 7 in the dry hop. Love that combo!
Use hop survivable chart from Yakima Chief for other combos that would be good.
Fermented for 2 weeks, then lower temp to 58F and use small dry hop container or bag in secondary for 3 or 4 days. Cold crash to 40F for a couple more days and rack to serving keg.
IF using Cryo Pop-
Dry Hop 1: Add hops at middle of active fermentation, with approximately
1.024 – 1.032 specific gravity left before final gravity.
Dry Hop 2: After final gravity is hit dry hop for two days at 72° F/ 22° C,
rousing once at 24 hours with C02. Dump hops from
bottom of FV after 48 hours.

| Notes: A beautiful Belgian with a fruit tang. I've made this recipe many times and it's a favorite at my house. For the fruit addition, I use 8 lbs of Walmart frozen mixed berries. I add them in the primary fermenter after fermentation is done around 7 days after pitch. I let them ferment out for a week or 2 and then cold crash, keg and use gelatin to fine. |

Notes: Notas sobre el agua:
- Alto contenido en cloro
- La relación cloro - sulfato tiene que estar entre 1-1:3
- 150-175 ppm de cloro y 75-100 ppm de sulfato.
- El cloro hace destacar más el carácter de la malta y el sulfato acentúa el lúpulo sin acentuar su amargor.
Mash a 65ºC durante 60 minutos o hasta que la conversión este completada. Añadir la mitad de las adicciones de sal del agua al mash y el resto al sparge.
Añadir los First Worth durante el runoff, inmediatamente después de vorlauf, y dejarlos empapar en el mosto caliente hasta que el pure esté sparged.
Hervir durante 60 minutos. Whirlpool durante 40 minutos (desde el principio hasta el resto) siguiendo el orden programado para los lupulos.
Los 17g de los lúpulos a los 20 minutos son añadidos cuando termina el Whirlpool.
Agregar la levadura y fermentar a 19ºC durante 2-3 días. Después subir poco a poco la temperatura hasta llegar a 23ºC al final de la fermentación. Cuando la fermentación haya llegado a 1.5-2ºC Plato (1.020-1.022) añadir el primer Dry hop. 4 días después, añadir el segundo Dry hop para los siguientes 4 días. Empackar en volúmenes de 2.6 CO2 y consumir fresca.

- Saber jugar con los porcentajes de los lúpulos utilizados durante el Whirlpool. Siempre entre 5-50% |

| Notes: THE FOLLOWING ARE BOTTLING DAY NOTES. This was our first batch to ferment in 15 to 16 degrees celcius (previously 20-24 C). Yeast used: Fermentis / Safale US-05 (11,5 g, no starter). We let it ferment for 3 weeks. On bottling day (13.3.2016) we noticed we hadn't been able to hit target FG of 1.011; instead we measured FG of 1.020. Probable reasons for low FG: (1) too low fermentation temperature (slow fermentation / too many yeast cells inactive), --> (2) too short fermentation time (+1 to 3 weeks better?), (3) lack of viable yeast OR (4) too many dextrines. In spite all of this the taste was excellent when the beer was sampled on bottling day (there appears to be a good BU/GU ratio & no yeasty features present :) Also very good color (nice orange), strong presence of hops (both bittering and aroma). Mouthfeel is also ok (the mouthfeel/texture is on the thick side.. as we intented). |
