| Notes: Quadrupel Style Grand Cru. Heavier trappist style, with an ABV hidden behind taste. Should be slightly sweet, but still dry with hints of sweet orange peel and a barrel-aged taste. Be sure to use a blowoff tube when fermenting. Add sweet orange peel in primary, and French Oak secondary. Fermentation lasts three weeks. After ten days, primary is over. |

Notes: I kept in primary for 20 days and tonight I racked it onto 2 oz of oak chips soaked in 4 oz of Jim Beam, which I had soaking for maybe 10 days (would have gone longer but slipped my mind).
Tasted it and I think it has excellent potential. It has a complex flavor which is rich in chocolate and has a pleasant after taste, seems well balanced and not warm of alcohol at all. I think the smell and taste are pretty similar to what Dragon's Milk must be like before the bourbon aging. If anything, I would have added a bit of dextrine for an increased body, but I won't really know until it's carbed. Only other desire is a little bit darker of a color, although my dad says he is happy with that.
I plan to taste it every two weeks until I reach the oak/bourbon character I want at which time I will bottle and report results after I drink the first. |

Notes: This is bound to be a very sweet stout.
Making first batch with the yeast I recovered from the barley wine, wlp013 london ale yeast and wlp099 super high gravity ale yeast. Worked well in the barley wine with 82% attenuation, which would give a FG of 1.020 and an ABV of 12%.
Mix 3 pounds of dark DME with one gallon of water to bring the water total to the proper amount.
Use iodine test at 60 minutes into mash
Enter in LA county fair for 2016
Might have to add a little more DME if the preboil gravity isn't at least 1.091
BLEW UP IN THE FERMENTOR
This recipe needs a much larger fermenter to handle the activity. Super dark and super heavy sugar content = explosive results |

Adjust mash water to "Light colored and malty" profile (Brewer's Friend)
Use well cooked Jasmine Rice for adjunct instead of flaked rice. Subtract water to cook rice used from mash.
Target 5.2 mash pH. (Phosphoric acid adjust in mash)
Chill to 50°F (10°C), oxygenate well, and pitch yeast starter.
Ferment at 50°F (11°C) for 7–10 days. Let free rise to 62°F (17°C) for 5 days, then slowly cool to 32°F (0°C) over the next week.

Imperial A62 Bell’s House Yeast; or Fermentis SafAle US-05 or other Chico-strain equivalent
DIRECTIONS
Mill the grains and mash at 154°F (68°C) for 60 minutes. Vorlauf until the runnings are clear, then lauter and sparge to get about 6.6 gallons (25 liters) of wort—or more, depending on your evaporation rate. Boil for 70 minutes, adding hops according to the schedule. Add the whirlpool hops at flame-out and whirlpool for 25 minutes. Chill the wort to 68°F (20°C), aerate well, and pitch the yeast. Ferment at 71°F (22°C), adding dry hops on Day 4. Allow fermentation to complete, then crash, carbonate, and package. |
