Notes: Water filtered through a carbon 5 micron filter numerous times. Starting pH 6.89
3g Calcium Chloride Anhydrous added to aid amylase in starch conversion.
pH adjusted to 5.5 using (pool acid) HCl.
Carscade hops home grown in Mount Macedon Vic Australia.
SG 1044 or 1042 Tilt and or Hydrometer.
I am trying to make a pale beer in the style of Corona with a well balanced but obvious new world American hop flavor. Not lawnmower beer more like beer you might have on the beach after a good surf watching the sun go down. ABV 4.5 IBU 22
Starter temp should be 25C for about 4 hours to get a better lift off
I used Wheatbix a supermarket cereal for the wheat component.

Last batch of this (2023-12-27) came out bangin' so we're keeping it going. 2 changes:
- lower OG and ABV: going for 10° and 4.5%
- moving HM hop addition to late. I like to smell and taste my noble hops.
Otherwise keeping the same as the 2023-12-27 batch. But please note: this REALLY hit its stride at 5 weeks. Lager this sum'bitch. |

Fruit generally adds fermentables that tend to thin out the beer; the resulting beer may seem lighter than expected for the declared base style - that is why mash is so high.
Sugar frim fruits shoud jack up the alc content to 5.5-5.6%.
Belgian yeast should attenuate well and produce some tart flavours that shall match fruit sweetness. |

Notes: Toasting the pecans brings out more flavor and will help remove oil from the nuts. This process might take some time to complete, but it is worth it. To speed up the process, spread them out over two cookie sheets.
Toast coarsely chopped pecans in oven on parchment paper at 325 F for about 10 minutes. Do not grease cookie sheet or use any oil. Do not let the pecans burn. Remove sheet from oven. Place nuts in paper bags and let them rest. The paper bags will soak up oil. While one batch of pecans is resting in bags, put the other sheet in the oven to toast. Alternate in this manner until the bags are not soaking up any more oil.
Place pecans in nylon bags for use in fermentor. |
